Introducing a recipe for incredibly fudgy and rich brownie muffins that will fill your mouth with flavor. I made these with my family, who absolutely love brownies, and they would be perfect to make with your children for Children’s Day. They are also highly recommended as gifts for special occasions.
Muffin Ingredients
- 150g Unsalted Butter
- 150g Cake Flour (low-gluten flour)
- 70g Granulated Sugar
- 8g Vanilla Sugar
- 3 Fresh Eggs
- 30g High-quality Cocoa Powder
- 1 tsp Baking Powder
- 6 Tbsp Fresh Milk
- 2 Tbsp Rum (optional, for enhanced flavor)
- 60g Dark Chocolate (or semi-sweet chocolate)
- 2 Ripe Bananas
- 60g Roasted Hazelnuts (or walnuts)

Cooking Instructions
Step 1
First, precisely measure all the ingredients listed in the recipe. Accuracy is key in baking!
Step 2
Peel the ripe bananas and slice them into approximately 3cm pieces. Be careful not to cut them too small, as they might turn mushy during baking.
Step 3
Melt the chocolate by adding it to a small amount of warm milk (about 1-2 tablespoons). You can melt it using a double boiler or by microwaving it in short intervals.
Step 4
In a large bowl, place the softened room-temperature butter. Use a hand mixer to cream it until smooth. Then, gradually add the granulated sugar and vanilla sugar in 2-3 additions, whipping until the sugar is fully dissolved and the mixture is light and fluffy.
Step 5
Once the butter and sugar mixture reaches a creamy consistency, add the eggs one at a time (or in 2-3 additions), whipping well after each addition. Avoid adding all the eggs at once to prevent the batter from separating. Continue whipping until the batter is smooth and creamy.
Step 6
To the creamy butter mixture, sift the cake flour, cocoa powder, and baking powder together. It’s best to sift them a second time directly into the bowl with the wet ingredients to ensure they are well incorporated and free of lumps.
Step 7
Add the rum and half of the milk to the batter. Gently fold them in with a spatula until just combined. Be careful not to overmix, as this can result in tough muffins.
Step 8
Heat the remaining milk until it’s hot (but not boiling) in the microwave. Pour this hot milk over the melted chocolate mixture and gently stir until smooth. This step helps to create a richer chocolate flavor and a fudgy texture.
Step 9
Add the prepared roasted hazelnuts to the batter and gently mix again until evenly distributed. The nuts add a delightful crunch and depth of flavor.
Step 10
Fill the muffin cups about halfway with the batter. Then, place the sliced banana pieces evenly on top of the batter in each cup. The bananas will add moisture and sweetness.

Top the bananas with the remaining batter, filling each muffin cup to about 70-80% full. This leaves room for the muffins to rise during baking.

Place one or two extra hazelnuts on top of each muffin for decoration. Bake in a preheated oven at 170°C (340°F) for approximately 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.

Once baked, carefully remove the muffins from the oven and transfer them immediately to a wire rack to cool completely. Cooling them on a rack prevents them from becoming soggy.

These muffins are delicious on their own, but for an extra special touch, try making a frosting. Whip together cream cheese (at room temperature) with a little milk and melted chocolate until smooth and creamy. Spread this luscious chocolate cream cheese frosting over the cooled muffins. The combination of the fudgy brownie muffin and the smooth, rich frosting is absolutely divine! Garnish with dried cranberries and fresh mint leaves for a beautiful presentation.
