Ingredients

  • 1 Tbsp Viewko Organic Extra Virgin Coconut Oil
  • 300g Tomatoes
  • 1 clove Garlic
  • 1 stalk Celery
  • 4 fresh Basil Leaves
  • 25g Parmesan Cheese
  • Pinch of Salt
  • Pinch of Black Pepper
  • 3 slices Rustic Bread

Cooking Instructions

Step 1

Begin by thoroughly washing the tomatoes. Peel them, remove the seeds, and then chop them roughly. This preparation will help achieve a wonderfully smooth texture in the final soup.

Step 2

Finely mince the garlic clove. Chop the fresh basil leaves as well. The basil will add a beautiful aroma, so it’s best to add it towards the end of the cooking process to preserve its fresh fragrance.

Step 3

Heat 1 tablespoon of Viewko Organic Extra Virgin Coconut Oil in a deep pot over medium heat. Add the chopped tomatoes, minced garlic, chopped celery, a pinch of salt, and a pinch of black pepper. Sauté for 2-3 minutes until the aromas begin to meld. Then, pour in 1.2 liters of water.

Step 4

Bring the mixture to a boil, then reduce the heat to medium-low. Cover the pot and let it simmer gently for about 1 hour. This slow cooking process allows the tomato flavors to fully develop and the ingredients to soften beautifully. Skim off any foam that rises to the surface during cooking.

Step 5

After simmering for an hour, add the 3 slices of rustic bread to the soup. Lower the heat to low and continue to cook for another 30 minutes, allowing the bread to soften and absorb the flavors of the soup. The bread will contribute to a richer, more satisfying texture. Be careful not to overcook the bread, as it can become mushy.

Step 6

Ladle the finished Viewko Coconut Tomato Soup into serving bowls. Grate a generous amount of fresh Parmesan cheese over the top. The salty, nutty notes of the cheese will elevate the soup’s delicious flavor profile even further. Enjoy this comforting and flavorful soup while it’s warm!
