This recipe elevates the classic French Onion Soup with the addition of fresh shrimp, creating a truly special and delicious soup.   • 500g Onions (approx. 2-3 medium)
  • 5 fresh Shrimp
  • 2 cups (400ml) Water

Seasonings and Aromatics

  • 3 Tbsp Olive Oil
  • 1 Tbsp All-purpose Flour
  • 1 tsp Salt
  • Pinch of Black Pepper

Cooking Instructions

Step 1

First, prepare the 500g of onions by peeling and rinsing them thoroughly. Then, remove the root ends and thinly slice them into strips about 0.5cm thick. Place all the sliced onions into a pot or a deep skillet.

Add 3 tablespoons of olive oil generously over the sliced onions in the pot. Now, turn the heat to medium and begin to slowly sauté the onions, stirring occasionally to prevent them from burning.

The onions will start to become translucent and reduce in volume, releasing a sweet aroma. Once the onions begin to release their moisture, reduce the heat to low. Simultaneously, prepare to clean the 5 shrimp.

For the shrimp, first remove the heads, then peel the shells cleanly. You can leave the tails on or remove them according to your preference. Rinse the prepared shrimp bodies thoroughly. (The shrimp heads and shells can be used to make a more flavorful broth.)

Continue to slowly caramelize the onions over low heat until they turn a deep golden brown color. (This step is crucial for the soup’s rich flavor.) Once the onions have reached the desired color, add 1 tablespoon of flour and stir it in, cooking for another 1-2 minutes with the onions. Cooking the flour helps to thicken the soup.

Slowly pour 2 cups (400ml) of cold water into the pot with the sautéed onions and flour. Use a whisk or spatula to mix well, ensuring the onions and flour are fully dissolved in the water and there are no lumps.

Now, add the prepared shrimp heads, shells, and bodies to the pot. Bring the heat to medium, and once the soup starts to boil, skim off any foam. Let it simmer for about 5-10 minutes until the shrimp turn a vibrant red and the broth has infused with their flavor.

Once the soup has become rich and red with the flavor of the shrimp and has reached a suitable consistency, season it with 1 teaspoon of salt and a pinch of black pepper to taste. When all seasonings are adjusted, turn off the heat and serve hot in bowls. Enjoy! This soup is even more wonderful when served with warm bread or rice.
