  • 75g dried pollack (about 2 handfuls)
  • 3 large eggs
  • 1 Tbsp sesame oil
  • 3/4 Tbsp soy sauce for soup or salt (adjust to taste)
  • 2 stalks scallions
  • 3 cups water (600ml; can increase to 750ml for more broth)

First, prepare the star of this delicious pollack soup: the pollack. Instead of cold water, soak the dried pollack in lukewarm water for about 10 minutes until it softens. Be careful not to soak it for too long, as this can diminish its flavor.

Once softened, gently squeeze the pollack with your hands a couple of times to remove excess moisture. This step concentrates the pollack’s flavor and improves its texture.

It’s time to add flavor to the squeezed pollack. Drizzle in 1 tablespoon of sesame oil and gently massage the pollack with your hands. The sesame oil coats the pollack with a savory aroma, making the broth even richer.

Crack 3 large eggs into a separate bowl and whisk them until smooth. Ensure they are well combined and have a uniform consistency.

Pour the whisked egg mixture over the seasoned pollack and gently mix them together. Let this mixture sit for about 5 minutes. This allows the egg to slightly absorb into the pollack, resulting in an even more tender and delicious texture.

Now, let’s create the clear and refreshing broth. Pour 3 cups (600ml) of water into a pot and bring it to a boil over high heat. Once the water is boiling vigorously, gradually add the seasoned pollack and egg mixture, stirring as little as possible to let it cook undisturbed. Gently place the pollack in to prevent clumping. Once the soup comes back to a boil, reduce the heat to medium-low and simmer for another 5-7 minutes. Finally, season with soup soy sauce or salt to taste, and garnish generously with chopped scallions. (Note: If you prefer a more brothy soup, you can increase the water to 750ml.)
