  • 70g beef for soup (e.g., brisket or chuck)
  • 1 liter (1000ml) water

Seasonings
  • 2 Tbsp soup soy sauce (ganjang)
  • 1 Tbsp fish sauce (optional, for umami)
  • 1 tsp sesame oil
  • 1 tsp salt (or to taste)

Cooking Instructions

Step 1

First, place the dried seaweed in a bowl and soak it in cold water until it becomes soft and rehydrated, about 10-15 minutes. Once rehydrated, gently rub the seaweed with your hands under running water to rinse away any sand or impurities. Squeeze out excess water and cut it into bite-sized pieces, about 3-4 cm long.

Step 2

Heat 1 teaspoon of sesame oil in a deep pot or Dutch oven over medium heat. Add the prepared seaweed to the pot.

Add the beef pieces for soup to the pot as well.

Sauté the seaweed and beef together until the seaweed turns a vibrant green and the beef is no longer pink. This usually takes about 2-3 minutes. Stir-frying is crucial to reduce any potential fishy taste from the seaweed and to build a savory base for the soup. Be careful not to overcook the seaweed, as its flavor can become too intense.

Step 5

Add the soup soy sauce (2 Tbsp) and fish sauce (1 Tbsp) to the pot. Stir and lightly sauté for another minute to allow the flavors to meld. The fish sauce adds a wonderful depth of umami, making the soup delicious even with a moderate amount of beef. If you don’t have soup soy sauce, you can use regular soy sauce and adjust the salt accordingly.

Step 6

Pour in 1 liter (1000ml) of water and bring the soup to a boil over high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer gently for at least 30 minutes. Simmering for a prolonged period allows the flavors of the seaweed and beef to fully infuse into the broth, creating a rich and deeply satisfying soup.

Step 7
