This isn’t your average tofu stew; it boasts a uniquely deep and rich broth. The harmony between the soft tofu and savory pork is simply divine. Main Ingredients
  • 1 block Tofu
  • 1 handful Ground Pork (approx. 100g)
  • 1/2 Onion
  • 1 handful Oyster Mushrooms
  • 1/2 Red Chili Pepper
  • 1/4 Green Onion

Golden Seasoning Sauce
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Red Pepper Flakes (Gochugaru)
  • 1/2 Tbsp Sugar
  • 1 Tbsp Mirin (Rice Wine)
  • 1/2 Tbsp Minced Garlic
  • 1 Tbsp Sesame Oil
  • 1 cup Water (200ml)

Cooking Instructions

Step 1

First, rinse the block of tofu under running water. Then, slice it into thick pieces, about 1.5 to 2cm thick. Gently press the sliced tofu with paper towels to remove excess moisture from both sides. This prevents oil splattering when frying and helps the tofu absorb the sauce better, enhancing its flavor. Slice the onion thinly, and tear the oyster mushrooms into bite-sized pieces after removing the tough ends. Slice the green onion and red chili pepper diagonally for a pop of color.

Step 2

Now, let’s pan-fry the tofu until golden brown. Heat a frying pan and add a generous amount of cooking oil. Once the oil is hot, carefully place the sliced tofu into the pan. Fry over medium-low heat, flipping occasionally, until both sides are golden brown and slightly crispy. Frying the tofu this way prevents it from breaking apart and gives it a chewier texture.

Step 3

Prepare a pot or deep pan for stewing. Spread a layer of sliced onions at the bottom. Arrange the golden-brown fried tofu pieces neatly on top of the onions. Finally, evenly spread the ground pork over the onions. Layering the ingredients like this ensures even heat distribution, resulting in a more delicious stew.

Step 4

Let’s make the seasoning sauce that will determine the flavor of the tofu stew. In a bowl, combine 1 Tbsp soy sauce, 1 Tbsp red pepper flakes (gochugaru), 1/2 Tbsp sugar, 1 Tbsp mirin (rice wine), 1/2 Tbsp minced garlic, and 1 Tbsp sesame oil. Pour in 1 cup (200ml) of water and mix thoroughly with a spoon. Your delicious seasoning sauce is ready!

Step 5

Pour the prepared golden seasoning sauce evenly over the ingredients in the pot. Decoratively arrange the green onion and oyster mushrooms on top for added color. Now, bring the pot to a boil over high heat. Once the sauce starts boiling vigorously, reduce the heat to medium-low, cover the pot with a lid, and let it simmer gently for about 10 minutes. The stew is ready when the sauce has reduced and deeply penetrated the ingredients. Enjoy it with a warm bowl of rice!
