This recipe introduces the ultimate beef and seaweed soup (Miyeokguk), a must-have for special occasions and a hearty start to any morning. Our family particularly loves Miyeokguk, and this version, simmered with plenty of beef, is so flavorful that we often make it even when it’s not a special day. Miyeokguk truly shines when simmered for a long time to develop its rich taste, so preparing it the day before allows the flavors to deepen beautifully. Adding the edible seaweed roots (miyeokgwi) enhances the soup, making it taste like a nourishing tonic. Enjoy this comforting and delicious bowl of beef and seaweed soup with your whole family! Let’s get cooking!
Main Ingredients- Dried seaweed (miyeok), rehydrated, for 10 servings
- Beef (for soup), 300g
- Sesame oil, 1 Tbsp
- Soy sauce for soup (guk-ganjang), 1 Tbsp (for marinating)
- Minced garlic, 1 Tbsp
- Water, 3 liters
- Soy sauce for soup (guk-ganjang), 1 Tbsp (for seasoning)
- Fish sauce, 1 Tbsp
Cooking Instructions
Step 1
First, gently press the beef with paper towels to remove any excess blood. This step helps to create a clearer broth.
Step 2
Rehydrate the dried seaweed in cold water for about 20 minutes, then cut it into bite-sized pieces. Marinate the beef by gently massaging it with 1 Tbsp of soy sauce for soup. This pre-marinating allows the flavors to penetrate the meat, resulting in a more delicious soup.
Step 3
Heat 1 Tbsp of sesame oil in a pot over medium heat. Add the minced garlic and sauté until fragrant. Then, add the marinated beef and stir-fry until the surface is lightly coated and no longer pink. Remove the sautéed beef and set it aside in a separate bowl. Separately searing the beef and seaweed contributes to a cleaner and richer flavor profile in the final soup.
Step 4
Wipe the pot clean, or use another pan with a little sesame oil, and add the rehydrated seaweed. Stir-fry the seaweed until it becomes tender and develops a vibrant green color. This sautéing step helps to release the seaweed’s natural umami.
Step 5
Combine the sautéed beef and seaweed in the pot. Pour in 3 liters of water and bring to a rolling boil over high heat. Skim off any foam that rises to the surface during cooking. It’s essential to simmer the soup for at least 1 hour to allow the deep, savory flavors from the beef and seaweed to fully develop, making the soup rich and the seaweed wonderfully tender. Finally, season the soup with 1 Tbsp of soy sauce for soup and 1 Tbsp of fish sauce to taste. Your delicious beef and seaweed soup is now complete!
Step 6
Ladle the beautifully prepared beef and seaweed soup into warm bowls. Serve this hearty and nutritious meal to ensure a satisfying start to a busy morning. It’s a special dish that nourishes both the body and soul of your entire family.
