  • Beef for soup (e.g., brisket, chuck) 1 pack (approx. 200-300g)
  • Dried cut seaweed 1 handful (approx. 10-15g)
  • Water 1L – 2L (adjust to your preferred soup consistency)

Seasoning

  • Perilla oil 1 Tbsp
  • Soup soy sauce 1.5 Tbsp (adjust to taste at the end)
  • Minced garlic 0.5 Tbsp

Cooking Instructions

Step 1

First, prepare the cut seaweed for the soup. Using pre-cut seaweed makes the cooking process much more convenient and saves time.

In a bowl, place the handful of cut seaweed and soak it in water for at least 30 minutes until fully rehydrated and soft. Drain the rehydrated seaweed gently using a colander.

Heat 1 tablespoon of perilla oil in a pot over medium-low heat. Add the beef for soup and stir-fry lightly until the surface is just cooked. The perilla oil will add a wonderful nutty aroma.

Once the beef is partially cooked, add the drained rehydrated seaweed to the pot. Continue to stir-fry for another 1-2 minutes, allowing the seaweed to absorb the flavors from the beef and perilla oil. This step deepens the soup’s taste.

Pour in 1L to 2L of water. Add 1.5 tablespoons of soup soy sauce and 0.5 tablespoon of minced garlic. It’s best to start with 1.5 Tbsp of soup soy sauce and adjust the seasoning later according to your preference.

Bring the soup to a boil over high heat. Once it starts boiling vigorously, skim off any foam that rises to the surface with a spoon. This step helps to make the broth clearer and cleaner. Continue to simmer until the seaweed turns from a bright green to a deep, dark green and becomes tender. This allows the flavors of the beef and seaweed to meld beautifully, creating a rich taste.
