- 1 piece of Cream Cheese (approx. 10g)
- A pinch of freshly ground Black Pepper
- A pinch of dried Basil flakes
- A pinch of Coarse Salt (for pasta water)
- 6 cloves of fresh Garlic
- 1 piece of Butter (approx. 10g)
- 1 piece of Cream Cheese (approx. 10g)
- A pinch of freshly ground Black Pepper
- A pinch of dried Basil flakes
Cooking Instructions
Step 1
Fill a pot with plenty of water and bring it to a boil over high heat. Once the water is boiling, add the spaghetti and gently untangle it with chopsticks to prevent sticking.
Step 2
When the water returns to a boil, add 1 teaspoon of coarse salt to season the pasta. Cook the pasta for about 9-10 minutes, checking the package instructions. While the pasta is cooking, wash the bok choy, cut it into quarters, and blanch it in boiling water for 15-20 seconds. Then, rinse it in cold water and drain.
Step 3
While the pasta is cooking, prepare the other ingredients. Thinly slice 4 cloves of garlic and shred the onion. Trim the ends of the mini king oyster mushrooms and cut them into 2-4 pieces.
Step 4
Cut the bacon into 1-1.5cm pieces. Have the butter and cream cheese ready at room temperature so they are soft and easy to incorporate.
Step 5
Heat a wide pan over medium heat, add a little olive oil, and sauté the sliced garlic until fragrant. Be careful not to burn the garlic.
Step 6
Once the garlic is fragrant, add the sliced onion, mini king oyster mushrooms, and bacon. Sauté until the bacon is golden brown and crispy, allowing the flavors to meld.
Step 7
Add the blanched bok choy (cut into bite-sized pieces) to the pan and toss gently. Now, add the remaining 2 minced garlic cloves, the butter, and the cream cheese. The cream cheese will melt, creating a smooth sauce.
Step 8
Drain the cooked spaghetti and add it directly to the pan. Also, add about one ladleful of the pasta cooking water (pasta water). The starch in the pasta water helps the sauce adhere to the noodles and makes it creamier.
Step 9
Place the 3 slices of cheddar cheese over the sauce and let them melt. The cheese will blend into the sauce, adding a richer flavor.
Step 10
Pour in the prepared 1 cup (200ml) of milk. Adjust the amount of milk based on your desired sauce consistency.
Step 11
Gently stir everything together and let it simmer until the sauce coats the pasta evenly. Season with a pinch of black pepper, a pinch of salt, and basil flakes to complete the flavor. Adjust seasoning to your taste.
Step 12
Serve the finished creamy pasta on a plate, sprinkling with parsley flakes. Garnish with cherry tomatoes or tomato slices for a more appealing presentation. Enjoy your rich and delicious creamy pasta!
