  • 1.5 cups Heavy Cream
  • 1 slice Cheddar Cheese
  • 3 strips Bacon
  • 1/3 Onion
  • 1 Korean Green Chili (optional)
  • 2 Shiitake Mushrooms
  • 2 Tbsp Olive Oil
  • 5g Chicken Stock (or 1/2 tsp)
  • Pinch of Salt
  • Pinch of Black Pepper
  • 2/3 bowl Cooked Rice (approx. 150g)

1. First, let’s prepare the vegetables and bacon! Finely mince the onion using a knife. 2. Cut the Korean green chili in half lengthwise and slice it thinly. (If you like it spicy, you can leave the seeds in.) 3. Trim the tough stems from the shiitake mushrooms and slice them thinly. 4. Dice the bacon into small pieces, similar in size to the minced onion, so it blends well with the rice.

Heat 2 tablespoons of olive oil in a pan over medium heat. Add the minced onion and sauté until translucent and fragrant. Once the onion is sweet, add the prepared bacon, Korean green chili, and shiitake mushrooms. Sauté everything together until the ingredients are lightly browned and cooked through. The bacon will release its savory fat, creating a wonderful aroma.

Add the 2/3 bowl of cooked rice to the pan with the sautéed ingredients and bacon. Break up the rice with a spatula and stir-fry everything together for about 1-2 minutes until the rice grains are coated in oil and slightly toasted. This forms a delicious base similar to fried rice.

Now it’s time to add the star of the risotto: the cream sauce. Pour all 1.5 cups of heavy cream over the stir-fried rice. The smooth and rich flavor of the cream will make your risotto truly special.

1. Add 5g of chicken stock (or 1/2 tsp) for an extra layer of umami. 2. Stir everything together with a spatula to combine the cream, rice, and sautéed ingredients. Simmer over medium-low heat, stirring frequently, until the sauce thickens to a creamy risotto consistency. This should take about 3-5 minutes, or until you reach your desired thickness. Be careful not to let it burn.

Once the cream has thickened and the risotto has reached its creamy texture, taste it and adjust the seasoning with salt and black pepper. Remember that bacon is already salty, so add salt gradually while tasting.
