Rich and Clear Beef and Radish Soup
How to Make a Clear and Flavorful Korean Beef and Radish Soup (Sogogi Muguk)
As the evenings get cooler, a hearty soup is a must-have! I haven’t had beef and radish soup in a while, and it was so delicious. The beef broth is incredibly rich and flavorful. This is a simple yet incredibly satisfying soup recipe.
Main Ingredients- 150g beef, suitable for soup (e.g., brisket, flank)
- 245g Korean radish (mu)
- 1/4 onion
- 1/2 Cheongyang pepper (or other chili pepper for mild heat)
- A small bunch of scallions (green onions)
Cooking Instructions
Step 1
First, thinly slice the onion into strips. Then, cut the Korean radish into bite-sized, half-moon shapes (about 0.5cm thick). Finely chop the Cheongyang pepper and thinly slice the scallions for garnish.
Step 2
Heat 1 tablespoon of sesame oil in a pot over medium-high heat. Add the beef and stir-fry until all the pink color has disappeared. Searing the beef first helps to remove any gaminess and enhances the richness of the broth.
Step 3
Once the beef is no longer pink, add the sliced radish to the pot. Continue to stir-fry for about 3 minutes. Coating the radish with the sesame oil and beef drippings will make the soup clearer and more flavorful.
Step 4
Next, add 1 tablespoon of minced garlic, 2 tablespoons of Korean soup soy sauce, and 1 tablespoon of anchovy sauce. Stir well to combine and continue to cook for another 3 minutes. This step allows the aromatics and seasonings to meld with the beef and radish.
Step 5
Pour in 1.6 liters of water. Bring the soup to a rolling boil over high heat. Once boiling, reduce the heat to medium, cover the pot, and let it simmer gently for 10 minutes. This allows the radish to soften and the beef to release its flavor into the broth.
Step 6
After 10 minutes of simmering, add the sliced onions to the pot. Continue to cook for an additional 5 minutes. The onions will add a subtle sweetness and further enhance the clarity of the broth.
Step 7
Finally, add the chopped Cheongyang pepper and 1/2 teaspoon of sea salt to season the soup. Taste and adjust the saltiness as needed. Once the flavor is to your liking, stir in the sliced scallions and bring to a brief simmer. Your rich and clear beef and radish soup is now ready to be enjoyed!
