  • 3 fresh abalones
  • 10 abalone livers (from 3 abalones)
  • 3 cups rice, soaked in cold water for at least 30 minutes
  • Water (about 5-6 times the amount of rice, for consistency adjustment)

First, carefully prepare the abalone livers. Separate the livers from the abalone flesh, remove any thin membranes from the livers, and lightly rinse them under running water. Heat a generous amount of sesame oil in a pot over medium heat. Add the prepared abalone livers. It’s crucial to break up the livers with a chopstick or spatula as soon as they are added to the pot. This process helps to remove any fishy smell and allows the rich, deep, jade-green color to infuse, creating a delicious base for your abalone porridge.

Once the livers have been sautéed and have released their aroma, add the soaked rice to the pot. Stir-fry the rice with the livers and sesame oil for about 1-2 minutes. This step helps the rice grains absorb the flavors, making the porridge much more savory and delicious.

Now that the rice and livers are well sautéed, pour in cold water to begin the cooking process. Add about 5 to 6 times the amount of rice in water and bring it to a boil over high heat. Boiling over high heat initially prevents the rice from clumping and ensures even cooking.

Once the porridge starts to boil, reduce the heat to medium-low. From this point on, it’s very important to stir the porridge frequently, scraping the bottom of the pot to prevent it from sticking. Continue to simmer and stir gently for about 15-20 minutes, or until the rice grains have completely softened and the porridge has reached a creamy consistency.
