When living alone, you often look for cost-effective ingredients. While many ingredients offer good value for money and taste, I’ve recently found myself adding retro sausage to my grocery cart. While retro sausage is often coated in egg and pan-fried, I also enjoy stir-frying it. So today, we’ll be making a retro sausage and vegetable stir-fry.

Ingredients

  • 160g Retro Sausage
  • 1 small Onion
  • 1 Green Bell Pepper
  • 1 Red Bell Pepper
  • 1/2 small Carrot
  • 3 Tbsp Cooking Oil

Seasoning

  • 1 Tbsp Gochujang (Korean chili paste)
  • 3 Tbsp Ketchup
  • 1.5 Tbsp Soy Sauce
  • 1.5 Tbsp Corn Syrup
  • 2/3 Tbsp Minced Garlic
  • 1/2 Tbsp Sugar
  • 1 Tbsp Water

Cooking Instructions

First, dice the onion into bite-sized pieces, about 1.5 cm cubes.

Slice the carrot into half-moons, similar in thickness to the onion pieces. This ensures all vegetables cook evenly.

Chop the green bell pepper into bite-sized pieces as well. While larger pieces are fine, smaller, manageable pieces are often preferred for stir-fries.

Slice the red bell pepper similarly to the green bell pepper to add color. A colorful dish is not only visually appealing but also enhances the overall flavor experience.

Cut the retro sausage into half-moon shapes, similar in thickness to the carrot slices. This shape helps the sausage maintain its form while cooking.

Now, let’s prepare the sauce. Start by adding 2/3 tablespoon of minced garlic to a mixing bowl.

Add 1/2 tablespoon of sugar for a touch of sweetness.

Measure and add 1.5 tablespoons of corn syrup. This will add a glossy sheen and a smooth sweetness to the sauce.

Next, add 1.5 tablespoons of soy sauce. This forms the savory base of our sauce.

Add 3 tablespoons of ketchup for a tangy and sweet flavor. This is one of the key ingredients for this dish!

Finally, add 1 tablespoon of gochujang, leveled off. It’s important not to add too much gochujang, as it can make the sauce taste too strong and overpowering. The ratio of ketchup to gochujang is key for a balanced flavor; more ketchup than gochujang results in a cleaner, more delicious sauce.

Stir all the sauce ingredients together thoroughly. Don’t taste the sauce now; the flavor will change once it’s cooked with the other ingredients. Tasting the unheated sauce can be misleading as the flavors meld and develop upon heating.

Let’s start stir-frying! Pour 3 tablespoons of cooking oil into a pan and heat it over medium heat.

Once the oil is heated, add the carrots to the pan and stir-fry for about 1 minute. Carrots are the densest vegetable here and take the longest to cook. Stir-frying them first ensures they soften properly while other ingredients retain their crispness.

After 1 minute, add the retro sausage to the pan. Stir-fry for approximately 3 minutes, or until the sausage turns golden brown on the edges. A light fry will enhance its flavor.

Once the sausage is lightly browned, add the chopped green and red bell peppers. Stir-fry for about 2 minutes. The goal is to cook them just enough to maintain their crisp texture.

After 2 minutes, add the diced onion and stir-fry for only about 30 seconds. Onions cook very quickly and become tender; adding them last helps preserve their satisfying crunch.

After 30 seconds, add the prepared sauce to the pan.

Add 1 tablespoon of water to prevent the sauce from becoming too thick and to help it coat the ingredients evenly.

Stir-fry everything together for another 2 minutes, ensuring all ingredients are well coated with the sauce. Now is the time to taste! Adjust the seasoning according to your preference, adding a little more sugar or soy sauce if needed.
