Cooking Instructions
Step 1
First, please check that you have all the necessary ingredients for this recipe. It’s especially helpful to prepare the ‘Sauce’ ingredients by measuring them out and mixing them in advance. This will make the cooking process much smoother. Ensuring the sauce is well combined beforehand is key.
Step 2
Cut the fish cakes into bite-sized pieces or your preferred shapes. If you’re cooking for children, cutting them into fun shapes might be a great idea! Feel free to cut them into any size and shape you like.
Step 3
Chopped leeks add a refreshing element to the tteokbokki. Slicing them diagonally helps the sauce to penetrate better and also looks appealing. Cut them into large pieces, about 2-3 cm long.
Step 4
Pour 800ml of clean water into a wide, deep pot or wok. Having enough water is important to prevent the rice cakes from sticking and to allow the sauce to dissolve properly.
Step 5
Add all of the pre-mixed ‘Sauce’ ingredients into the pot. The combination of gochugaru, gochujang, soy sauce, sugar, garlic, fish sauce, dashida, and corn syrup will form the base for your delicious tteokbokki sauce.
Step 6
Once the water in the pot begins to boil over medium-high heat, add all 400g of the cylindrical rice cakes. It’s a good idea to stir occasionally to prevent the rice cakes from sticking together.
Step 7
As the rice cakes start to cook, add the cut fish cakes. The fish cakes will absorb the flavorful sauce, making them even more delicious.
Step 8
If you’re using sausages, add them all at this stage. Sausages add a satisfying texture and salty flavor, enhancing the overall richness of the tteokbokki. (You can omit them or add other ingredients according to your preference.)
Step 9
Add all the sliced leeks on top of the tteokbokki. Then, let it simmer until the sauce thickens. At this point, check if the rice cakes are tender. If they are still too firm, continue simmering for a bit longer.
Step 10
Once the rice cakes are almost cooked and the sauce has thickened slightly, tear the 3 slices of cheddar cheese and scatter them over the tteokbokki. The melting cheese will add a smooth, rich flavor.
Step 11
Next, generously add the mozzarella cheese. The stretchy, melted cheese will elevate both the appearance and the taste of your tteokbokki. Sprinkle it evenly over the rice cakes and other ingredients.
Step 12
Finally, cover the pot with a lid and reduce the heat to low. Wait just until the cheese has melted completely. Be careful not to overcook, as the cheese can become tough. Once the cheese is perfectly melted, your delicious, hearty, and restaurant-style tteokbokki is ready!
