Main Ingredients

  • Salmon steaks, 2 portions (approx. 150-200g each)
  • Carrot, 1/3 to 1/2
  • Minced garlic, 1/2 Tbsp
  • Butter, 1 Tbsp
  • Parsley flakes, 1.5 Tbsp
  • Orange juice, 200ml (freshly squeezed or 100% juice)
  • Whole black peppercorns, a pinch
  • Cooking oil, as needed

Cooking Instructions

First, prepare the carrots that will be used as a garnish for the steak. Wash the carrots thoroughly, peel them, and then slice them thinly into rounds, about 0.3cm thick, trying to maintain their circular shape for an attractive presentation.

For the salmon steaks, use kitchen paper towels to gently pat the surface dry. Removing excess moisture is crucial to ensure the salmon sears beautifully and doesn’t stick to the pan.

To ensure the salmon cooks evenly all the way through, score the skin side with a knife, making about 2-3 shallow cuts. This allows heat to penetrate better, resulting in a more delicious outcome.

Lightly season the salmon with salt. This simple step helps to eliminate any fishy odors and enhances the overall flavor of the steak.

Now, prepare the pan for making the sauce. Add a little cooking oil to the pan and gently sauté the sliced carrots over low heat. Cook them until they start to soften slightly, and sprinkle a pinch of whole black peppercorns for added aroma.

Once the carrots have softened a bit, add 1 Tbsp of butter to the pan. As the butter melts, it will coat the carrots with a rich, savory flavor.

When the butter has completely melted, pour in 200ml of orange juice and add 1/2 Tbsp of minced garlic. Stir everything together well. The delicious orange juice sauce is now beginning to form.

Let the sauce simmer gently over low heat until it reduces and thickens slightly. Once the sauce has a nice, syrupy consistency, add 1.5 Tbsp of parsley flakes and stir for about 10 seconds to release their fragrance. Then, carefully transfer the finished sauce to one side of your serving plate. This will be the delicious base for your steak.

Prepare another pan for cooking the salmon. Add a generous amount of cooking oil to the pan and heat it over medium heat. Place the salmon skin-side down first. Searing the skin side first is key to achieving a wonderfully crispy texture.

Once the salmon has cooked for a bit on the skin side, tilt the pan slightly. Using a spoon, ladle the hot oil from the pan over the salmon flesh continuously. This technique is called ‘basting,’ and it’s a brilliant way to cook the fish through without needing to flip it, keeping the flesh moist and tender.

Check the salmon for doneness. When it’s cooked to your liking, place 1/2 Tbsp of butter on top of the salmon and let it melt. Spoon the melted butter over the salmon flesh again to add extra richness and a silky texture.
