  • 1 tsp Minced Garlic
  • 1 Tbsp All-Purpose Flour
  • 250ml Heavy Cream
  • 200ml Milk
  • 1 tsp Liquid Chicken Stock
  • Pinch of Salt
  • 2 Tbsp Grated Parmesan Cheese
  • 1 slice Cheddar Cheese
  • Pinch of Black Pepper

Cooking Instructions

Begin by trimming the tough ends of the button mushrooms. Slice them into roughly 0.5cm thick pieces. Avoid slicing them too thinly, as they can break apart when cooked.

Peel and thinly slice the half onion into strips. Aim for a medium thickness to prevent burning during the sautéing process.

In a pot or deep pan, melt the 30g of unsalted butter over medium-low heat. Add the sliced onions and 1 tsp of minced garlic. Cook gently, stirring occasionally, until the onions become soft and translucent, about 5-7 minutes. Do not let them brown excessively.

Once the onions are softened, add the sliced mushrooms to the pot. They will release moisture and their volume will decrease as they cook.

Continue to cook the mushrooms, stirring frequently, until they have released their liquid and have turned a deep golden brown color. This process deepens their flavor significantly. Sauté for another 5-7 minutes.

When the mushrooms are beautifully browned, sprinkle in 1 Tbsp of all-purpose flour. Stir and cook for about 1 minute to toast the flour and remove any raw taste. Gradually pour in the 250ml of heavy cream and 200ml of milk, whisking constantly to prevent lumps.

Add 1 tsp of liquid chicken stock to enhance the savory depth of the soup. This provides a wonderful base flavor without needing to make a separate stock.

Stir everything together until well combined, ensuring there are no lumps of flour stuck to the bottom of the pot. Once smoothly blended, turn off the heat. Carefully use an immersion blender or transfer the mixture to a regular blender to purée until smooth. Be cautious when blending hot liquids.

Return the puréed soup to the pot over low heat. Bring it to a gentle simmer, then add the 1 slice of cheddar cheese and 2 Tbsp of grated Parmesan cheese. Stir until the cheeses are fully melted and smoothly incorporated into the soup.
