Cooking Instructions
Step 1
Prepare the Korean beef specifically for bulgogi. It’s convenient to ask your butcher to slice it thinly for this purpose.
Step 2
Instead of using a lot of sugar, this marinade relies on naturally sweet fruits like pear and apple, blended to create a deep and wholesome flavor profile.
Step 3
Peel half a pear and half an apple, and cut one onion into large pieces. Blend these ingredients in a blender or food processor until smooth.
Step 4
In a bowl, combine the blended fruit and onion mixture with soy sauce, fish sauce, minced garlic, cooking wine, oligodang, sugar, water, sesame oil, pepper, and ginger juice. Whisk well until the sugar dissolves, creating a flavorful bulgogi marinade. Gently pat the beef slices dry with paper towels to remove excess moisture, then add them to the marinade, ensuring each piece is evenly coated. Let it marinate.
Step 5
Buying extra bulgogi meat and marinating it allows for convenient meal prep. You can portion and freeze the marinated beef, making it easy to take on camping trips or weekend getaways for a delicious, home-cooked meal at your destination.
Step 6
While the meat is marinating, prepare the vegetables: slice the onion, carrot, green chilies, red chili, and green onion into bite-sized pieces. Soak the glass noodles in cold water for at least 30 minutes until they are softened and pliable.
Step 7
Transfer the marinated beef to a pot, along with all the marinade. Bring it to a boil over high heat. It’s best to start cooking with the lid off.
Step 8
As the beef changes color and begins to cook, skim off any foam or scum that rises to the surface using a spoon. This step helps create a cleaner, more refined broth.
Step 9
When the beef is almost fully cooked, add the prepared vegetables (onion, carrot, chilies) and the soaked glass noodles to the pot. Stir everything together and continue to cook. The noodles will absorb the flavorful broth, adding another layer of deliciousness.
Step 10
To serve in the traditional Ttukbaegi (earthenware pot) style, transfer about half of the cooked beef and vegetables into a small earthenware pot. Add a portion of the remaining vegetables to the pot as well.
Step 11
Simmer the contents of the earthenware pot over medium heat until the glass noodles are cooked through and the broth has thickened slightly. Be careful not to let the noodles stick or burn, as they cook quickly.
Step 12
Your Ttukbaegi Bulgogi is ready, with the bubbling sound adding to the anticipation! Serve it directly from the pot to the table, enjoying the aromatic steam and the comforting sight of this classic Korean dish.
Step 13
Serving the Ttukbaegi Bulgogi immediately after cooking means you can enjoy the delightful chewy texture of the glass noodles. It’s so satisfying, you might not even need rice!
Step 14
The gentle bubbling sound from the earthenware pot creates a cozy atmosphere, making this Ttukbaegi Bulgogi a truly heartwarming dish. Its rich, savory flavor that clings to your palate with every bite is simply irresistible.
