Transform your frozen pomfret into delicious braised fish that won’t fall apart! We’re sharing the golden recipe for Parkdae Jorim, a side dish so addictive it will make you finish a bowl of rice in no time.
Main Ingredients- 3 Pomfret (Parkdae)
- 3 slices of Radish (approx. 1cm thick)
- 3 Dried Shiitake Mushrooms
- 1/2 stalk of Green Onion
- 1 Red Chili Pepper (or spicy green chili)
- 2 cups Anchovy-Kelp Broth (or rice water)
Cooking Instructions
Step 1
Make the Flavorful Broth: In a pot, add 4 cups (800ml) of water, 1 piece of dried kelp, a handful of dried anchovies for broth, and 3 dried shiitake mushrooms. Simmer over medium heat for about 10 minutes to extract a delicious broth. (You can also use store-bought broth or rice water.)
Step 2
Prepare the Vegetables: Remove the shiitake mushrooms from the broth and slice them into 3-4 pieces. Slice the radish that was used for the broth into about 1cm thick pieces. Chop the green onion diagonally and thinly slice the red chili pepper (removing seeds) for a splash of color.
Step 3
Begin Braising the Pomfret: Line the bottom of a deep pot with the sliced radish and shiitake mushrooms. Place the cleaned pomfret on top. Pour in the prepared 2 cups of anchovy-kelp broth. Bring to a boil over high heat, then reduce to medium heat and simmer for 10 minutes to allow the fish to absorb the flavors.
Step 4
Braise with Delicious Sauce: In a bowl, combine 2 Tbsp minced garlic, 2 Tbsp gochugaru, 2 Tbsp rice syrup, and 1 Tbsp mirin. Mix well to create the braising sauce. Once the pomfret starts to cook, evenly pour the prepared sauce over it. Cover with a lid and simmer over low heat for 15-20 minutes, or until the sauce has reduced to a glaze. Basting the fish with the sauce occasionally will enhance the flavor. Finally, add the sliced green onion and chili pepper, cook for another minute, then turn off the heat and serve beautifully on a plate. Your addictive Parkdae Jorim is ready!
