Main Ingredients- Soba noodles: 150g
- Scallions: 1 stalk

Refreshing Tentsuyu Broth- Tentsuyu (noodle dipping sauce): 1 Tbsp

Cooking Instructions
Step 1
Start by preparing the cherry tomatoes for the compote. Make a small cross-shaped incision at the stem end of each cherry tomato. Blanch them in boiling water for about 30 seconds, then immediately transfer to an ice bath. This makes peeling the skins much easier.

Place the peeled cherry tomatoes in a saucepan. Add 1 paper cup of dashi broth, 1 Tbsp soy sauce, 1 Tbsp sugar, and a splash of lemon juice for brightness. Bring to a simmer over medium heat and cook for 3 minutes, allowing the tomatoes to soften slightly and absorb the flavors.

Once the compote is cooked, let it cool slightly. Then, cover it with plastic wrap and refrigerate until thoroughly chilled. Serving this compote cold is key to its refreshing taste when combined with the noodles.
