Refreshing Tomato Kimchi (Geotjeori) Recipe
How to Make Fresh and Vibrant Tomato Kimchi with Seasonal Tomatoes
While tomatoes might be a bit pricey these days, my husband loves them so much that I bought a whole box! I decided to use just a few to make this delightful kimchi salad, or ‘Geotjeori’. This is a wonderfully simple yet flavorful dish that’s perfect as a refreshing side with rice or a delightful accompaniment to grilled meats. Let’s make this easy and delicious tomato Geotjeori!
Main Ingredients- 3 ripe tomatoes
- 1/2 medium onion
- A small bunch of chives (cut into approx. 7-8cm lengths)
Seasoning Mix- 1 Tbsp sugar (for sweetness)
- 1 Tbsp gochugaru (Korean chili flakes, for spice)
- 1 Tbsp fish sauce (for umami)
- 1/2 Tbsp plum extract (for a sweet & tangy note)
- 1 Tbsp toasted sesame seeds (plus extra for garnish)
- 1 Tbsp sugar (for sweetness)
- 1 Tbsp gochugaru (Korean chili flakes, for spice)
- 1 Tbsp fish sauce (for umami)
- 1/2 Tbsp plum extract (for a sweet & tangy note)
- 1 Tbsp toasted sesame seeds (plus extra for garnish)
Cooking Instructions
Step 1
First, wash the tomatoes thoroughly and remove the core. Cut them into 8 wedges. If your tomatoes are large, you can cut them into 6 wedges.
Step 2
Thinly slice the onion into shreds. Cut the chives into manageable pieces, about 7-8 cm long. The fresh aroma of chives will enhance the overall flavor of the tomato Geotjeori.
Step 3
In a large bowl, combine the prepared tomatoes, sliced onions, and cut chives. Add the seasoning ingredients: 1 Tbsp sugar, 1 Tbsp gochugaru, 1 Tbsp fish sauce, 1/2 Tbsp plum extract, and 1 Tbsp toasted sesame seeds. Gently toss everything together using two spoons. This method helps to mix the ingredients evenly without mashing the tomatoes, preserving their fresh texture. Be careful not to mix too vigorously.
Step 4
Transfer the beautifully mixed tomato Geotjeori to a serving plate. Sprinkle a little extra toasted sesame seeds on top for garnish. Your refreshing tomato Geotjeori is now ready! It’s delicious served immediately, or you can chill it in the refrigerator for an even more refreshing taste.
