  • 1 ripe, firm tomato
  • 0.5 Tbsp fresh lemon juice
  • A little cold ice
  • 0.5 Tbsp olive oil

Tomatoes are a fantastic source of vitamins and minerals, packed with antioxidants like lycopene, which is known to help prevent strokes, heart attacks, lower blood sugar, and potentially prevent cancer. There was once a debate in the US about whether tomatoes were fruits or vegetables, with the Supreme Court eventually ruling them as vegetables. Tomatoes possess characteristics of both fruits and vegetables, containing citric acid, malic acid, succinic acid, amino acids, rutin, protein, carbohydrates, ash, calcium, iron, phosphorus, vitamins A, B1, B2, C, and plenty of dietary fiber. A single tomato can provide about half of your daily recommended Vitamin C intake. They are also rich in antioxidants such as lycopene and beta-carotene, making them incredibly beneficial for health.

After washing the tomato thoroughly, remove the stem and make a shallow cross-shaped cut (+) on the top. This scoring will make peeling the tomato much easier later on.

Carefully place the scored tomato into boiling water for about 30 seconds to 1 minute, just until the skin begins to loosen. Immediately transfer the tomato to a bowl of ice-cold water to stop the cooking process. This chilling step allows the skin to slip off effortlessly.

Today, we’re making juice with just one tomato. (While I usually use two, one is perfect for today!) Simply add the tomato to your blender along with a small handful of ice and blend right away for a cool and delicious tomato juice.

Cut the peeled tomato into pieces that are easy for your blender to process. Add the tomato pieces to the blender, along with 0.5 tablespoon of fresh lemon juice and a few cubes of ice. (While you can blend raw tomatoes, we’ve blanched ours for this recipe.) For a touch of sweetness, add a pinch or two of salt, and a little olive oil will help increase the absorption of lycopene, a key nutrient in tomatoes.
