This is a ‘Tofu Tomato Salad’ made using tofu instead of cheese, capturing the charm of a traditional caprese salad. The combination of fresh tomatoes and mild tofu, enhanced by a fragrant balsamic sauce, makes it a perfect appetizer or light meal to awaken your appetite.

  • 1-2 ripe tomatoes
  • 1/2 block firm or silken tofu (suitable for raw consumption)
  • A small amount of broccoli

Cooking Instructions

First, wash the ripe tomatoes thoroughly, pat them dry, and slice them into rounds approximately 0.8 to 1 cm thick. Similarly, slice the silken or firm tofu (the kind suitable for raw consumption) to a similar thickness as the tomatoes. If you are using regular, firmer tofu, it’s recommended to lightly blanch it in boiling water and then drain it before use. This step will make the tofu even softer and more pleasant to eat.

Now, it’s time to artfully arrange the tofu and tomatoes on a plate, alternating them. Place a slice of tomato, then a slice of tofu on top, followed by another tomato, and then tofu again. Layer them up like this to create a visually appealing salad, reminiscent of a classic caprese.

Drizzle a generous amount of delicious balsamic dressing over the prepared tofu and tomatoes. You can use store-bought balsamic dressing as is, or for a homemade version, gently heat balsamic vinegar with a touch of honey or sugar, stirring until slightly thickened, to create a richer sauce. If you prefer, you can also add a pinch of salt and pepper.

Finally, add fresh broccoli for a vibrant color and added nutrients. Cut the broccoli into bite-sized florets and briefly blanch them in boiling water. Arrange the blanched broccoli nicely alongside the salad. For an even more enhanced flavor and presentation, consider adding fresh basil leaves or mixed baby greens, or a sprinkle of parsley powder.
