Seaweed Seasoning

  • 1 Tbsp tuna extract (or 1/2 Tbsp soy sauce for soup)
  • 1 tsp minced garlic

Chilled Broth Seasoning

  • 600ml cold water (approx. 3 cups)
  • 1 Tbsp salt (adjust to taste)
  • 3 Tbsp sugar (adjust to taste)
  • 5 Tbsp vinegar (adjust to taste)

Cooking Instructions

Step 1

Begin by soaking the dried seaweed in cold water for about 10-15 minutes until fully rehydrated. Gently rub the rehydrated seaweed with your hands to clean it and remove any grit. Squeeze out excess water thoroughly. Trim off any tough or undesirable parts.

Step 1

Step 2

In a bowl, combine the squeezed seaweed with the seasoning ingredients: 1 Tbsp tuna extract, 1 tsp minced garlic, and 1 tsp vinegar. Gently mix until the seaweed is evenly coated. For best results, chill this seasoned seaweed in the refrigerator for a while.

Step 2

Step 3

Wash the cucumber, trim off both ends, and slice it into thin julienne strips. Aim for consistent thickness for an appealing presentation and pleasant texture.

Step 3

Step 4

Now, let’s prepare the refreshing broth! In a large bowl, pour 600ml of cold water. Add 1 Tbsp salt, 3 Tbsp sugar, and 5 Tbsp vinegar. Stir well until the seasonings are dissolved. Feel free to adjust the sweetness and tanginess to your preference. Taste and add more salt, sugar, or vinegar as needed.

Step 4

Step 5

Add the seasoned seaweed and julienned cucumber to the prepared broth. Gently mix everything together. Finally, sprinkle 1 tsp of toasted sesame seeds on top for a nutty aroma and visual appeal. Your delicious Miyeok Oi Naengguk is ready! While it’s tasty right away, chilling it in the refrigerator further enhances its refreshing qualities.
