  • 1/4 onion
  • A few fresh basil leaves
  • 1 Tbsp vinegar (for washing tomatoes)

Marinade Sauce

  • 2 Tbsp extra virgin olive oil
  • 1.5 Tbsp balsamic vinegar
  • 1 Tbsp fresh lemon juice
  • 0.3 Tbsp salt (or to taste)
  • 1 Tbsp allulose (or oligodangsirup, honey)
  • A pinch of black pepper

Today, we’ll be making a deliciously tangy and sweet marinated dish with 300g of cherry tomatoes. You can also prepare a delightful tomato and egg stir-fry to enjoy alongside it.

First, thoroughly wash the cherry tomatoes under running water two to three times. Then, soak them in water with a little vinegar for about 5 minutes, and rinse again under running water. This helps remove any residual pesticides or impurities. Finally, drain them completely in a colander.

Make shallow cross-shaped incisions on the top of each tomato. This scoring will make peeling the skins much easier later on.

Bring a pot of water to a rolling boil over high heat. Once the water is boiling vigorously, carefully add the prepared cherry tomatoes.

Once the water returns to a boil, blanch the tomatoes for about 30 seconds. Be careful not to overcook them, as they can become mushy. Immediately transfer the blanched tomatoes to a bowl of ice water to cool them down quickly. Then, drain them thoroughly in a colander. Their skins should now be ready to peel off smoothly.

Thinly slice 1/4 of an onion into strips. Soak the sliced onion in cold water for about 10 minutes to mellow out its strong flavor. After soaking, drain it well and squeeze out any excess water. This will add a crisp texture and a clean taste.

Place the drained cherry tomatoes in a bowl, and add the sliced onion. Tear a few fresh basil leaves from your balcony garden and add them to the bowl. The basil will impart a wonderful freshness. (You can omit the basil if you don’t have any.)

Now, let’s make the marinade sauce. In a separate bowl, combine 2 tablespoons of olive oil, 1.5 tablespoons of balsamic vinegar, and 1 tablespoon of store-bought lemon juice. If you have fresh lemons, squeezing your own lemon juice will add even more vibrancy.

Add a pinch of white pepper and 0.3 tablespoons of salt (or to your preference) to the sauce. For sweetness, add 1 tablespoon of allulose. If allulose is unavailable, you can use the same amount of oligodang or honey. Whisk all the ingredients together until well combined to create the sauce.

Pour the finished marinade sauce evenly over the cherry tomatoes, onion, and basil. Gently toss everything together to ensure the sauce coats the ingredients well.
