  • Radish 6 slices (approx. 4cm thick)
  • White Wine 4 Tbsp (for flavor enhancement, optional)
  • Water 1.5L

Fresh Topping Ingredients

  • Tomato 1/2 (thinly sliced)
  • Cooked Octopus 80g (thinly sliced)
  • Grated Radish 2 Tbsp (for fresh flavor)
  • Chopped Green Onion 2 Tbsp (for aromatic freshness)

  • Ice (as desired)
  • Soba Noodles 2 servings

Cooking Instructions

The secret to a delicious cold soba broth lies in these three sauces. We’ll be using leftover Goraesa fish cake broth powder, katsuobushi sauce, and udon tsuyu sauce to create a rich and flavorful broth. If you don’t have these specific ingredients, don’t worry! You can use store-bought mentsuyu or udon liquid sauce, or even make your own broth from scratch using soy sauce, sugar, dashi stock, mirin (or sake), and katsuobushi.

First, add the katsuobushi sauce, udon tsuyu sauce, and the broth powder to a pot. These ingredients will meld together to create the signature savory flavor of cold soba.

Next, pour in 1.5L of water to create a refreshing and clean broth. (If you don’t have store-bought sauces, you can add soy sauce, sugar, dashi stock, mirin or sake, and katsuobushi at this stage to make your broth.)

To add a cool, subtle sweetness to the broth, slice the radish into thick, half-moon shapes. For an extra layer of flavor, add 4 Tbsp of white wine. (This is optional; if you don’t have white wine, you can omit it or use sake.)

Now, bring the pot to a rolling boil over high heat. Once it boils, reduce the heat to medium-low and simmer until the radish is completely tender, allowing the flavors to deepen and create a concentrated broth. Finally, season the broth by adding 2 Tbsp of Katsuobushi Broth Tsuyu. The broth should be slightly salty to ensure it tastes perfect when combined with the noodles. Since cold soba is best served chilled, transfer the broth to the kimchi refrigerator to cool completely.

Prepare the vibrant toppings for your cold soba. Thinly slice the tomato after removing the seeds, and thinly slice the pre-cooked octopus. These toppings should also be chilled for the best taste, so keep them in the kimchi refrigerator until ready to serve.

Prepare the grated radish and chopped green onions, which will add a refreshing zest and aroma. The grated radish is made by finely grating fresh radish, and the green onions are finely chopped. Keeping these chilled will also enhance their freshness.

Cook the soba noodles according to the package instructions in boiling water with a pinch of salt. Once cooked, rinse the noodles thoroughly under cold running water to remove excess starch. Drain them well. Arrange the noodles neatly in serving bowls.
