How to Make a Cool and Refreshing Miso Soup with Soybean Sprouts and Crown Daisy
My children grew up eating this soup, learning that crown daisy is a resilient spring vegetable that overcomes winter. They still love its aroma and flavor. Adding a handful of soybean sprouts makes the soup even more refreshing. This recipe brings out the best of crown daisy, a special ingredient that signals spring, making it easy for anyone to follow.
Ingredients- 150g fresh crown daisy (namul)
- 1 handful soybean sprouts (about 50g)
- 1.5 Tbsp miso paste
- 0.5 Tbsp red pepper paste (gochujang)
- 1.2L anchovy and kelp broth
- 1/2 block firm tofu
- 15cm segment of green onion
- 1 Tbsp minced garlic
- Optional: A little tuna extract or soy sauce for seasoning
Cooking Instructions
Step 1
Thoroughly clean the crown daisy by removing any soil from the roots and stems. Rinse it several times under running water to ensure it’s completely free of dirt.
Step 2
Wash the soybean sprouts. Cut the half block of tofu into bite-sized pieces, about 1.5cm thick or cubes.
Step 3
In a pot, combine 1.3 liters of cold water and 1 anchovy/kelp broth pack. Bring to a boil. Once boiling, use a sieve to dissolve the miso paste and red pepper paste into the water, ensuring no lumps remain. Discard the broth pack after the soup starts boiling.
Step 4
About 10 minutes after the miso broth begins to boil, add the cleaned crown daisy. Let it simmer to allow its fragrant aroma to infuse into the soup.
Step 5
As the crown daisy starts to soften slightly, add the diagonally sliced green onion and minced garlic for added flavor.
Step 6
Finally, add the tofu pieces and let them simmer gently until heated through. Stir carefully to prevent the tofu from breaking apart.
Step 7
Add the soybean sprouts and cook for an additional 3-4 minutes. This ensures they remain crisp and refreshing. Avoid overcooking, as they can become mushy.
Step 8
