Craving the soba noodles you used to enjoy in Japan? I made them at home after a long time! The ingredients are simple and the preparation is easy, making it a wonderful treat for the summer. This recipe is perfect for a light and refreshing meal.

Main Ingredients

  • Soba noodles (buckwheat noodles) for 2 servings
  • 1 bunch scallions
  • 1/4 medium-sized daikon radish

Dipping Sauce

  • 100ml bottled soba tsuyu (noodle dipping sauce)
  • 100ml cold water

Cooking Instructions

Step 1

Prepare 2 servings of soba noodles. If you don’t have soba noodles, you can use other noodles with a similar texture. Bring a large pot of water to a boil. Add the noodles and cook according to the package directions. Once cooked, rinse the noodles thoroughly under cold running water to remove excess starch. Drain them well in a colander. Portion the noodles into two servings and arrange them neatly on individual plates.

Peel and wash the daikon radish. Grate it finely using a grater and set aside in a small bowl. Wash the scallions and finely chop them. Place the chopped scallions in another small bowl. These toppings will add a fresh and crisp element to your soba dish.

Now, let’s prepare the dipping sauce (tsuyu). Mix 100ml of bottled soba tsuyu with 100ml of cold water. This is a 1:1 ratio. For an extra refreshing experience, add plenty of ice cubes to the sauce. Keep in mind that adding ice will dilute the sauce, so if you prefer a saltier taste, adjust the amount of water accordingly. Once your sauce is ready, arrange the grated daikon radish and chopped scallions on top of the noodles on each plate. Serve the chilled soba tsuyu on the side for dipping.

Add wasabi to your dipping sauce for an extra kick! I love a bit of spiciness, so I mixed a generous amount of fresh wasabi into my soba tsuyu. The pungent flavor of wasabi perfectly complements the soba noodles. Feel free to customize your sauce by adding other ingredients like soy sauce or vinegar to suit your taste.
