- Ground perilla seeds (Deulkkae garu) 2 Tbsp

- Dried kelp (1 sheet, approx. 10×10 cm)
- Dried anchovies (for broth)
- Dried pollock heads (optional, for richer flavor)
- Dried kelp (1 sheet, approx. 10×10 cm)
Cooking Instructions
Step 1
First, wash the 460g of scallions thoroughly. We’ll be using both the white and green parts. Cut them into larger, slightly longer pieces than a tablespoon. Cutting them this way helps maintain their texture after cooking, preventing them from becoming too soft.
Step 2
To make a delicious scallion soup, we’ll start by creating a clear and deep broth. In a pot, combine the dried anchovies, dried pollock heads (if using), and kelp. Pour in 2.2 liters of water. To make the broth: bring it to a boil over high heat, then reduce the heat to medium-low and simmer for another 15 minutes. This process will extract the savory flavors from the ingredients, resulting in a flavorful broth.
Step 3
Once the broth is boiling, add all the prepared scallions. Now, add 2 Tbsp of soy sauce for soup (Jipganjang) to enhance the savory notes and 2 Tbsp of fish sauce (Kanari Aekjeot) for a refreshing taste. Bring the soup back to a boil over high heat.
Step 4
Cover the pot with a lid and let it boil vigorously. This allows the flavors of the broth and scallions to meld together beautifully.
Step 5
When the soup is bubbling vigorously, remove the lid. Add 1 Tbsp of minced garlic to eliminate any potential gaminess and add aroma, and 2 Tbsp of ground perilla seeds for a rich, nutty flavor. Give it a gentle stir to combine the ingredients.
Step 6
Now, reduce the heat to low. Partially cover the pot, leaving a small gap for steam to escape. Let it simmer gently for 10 minutes. This slow simmering allows the essence of the scallions to infuse more deeply into the broth and perfectly blends the nutty flavor of the perilla seeds.
Step 7
Warm soup is especially comforting during the transitional seasons! This scallion soup has a remarkably refreshing and clean taste. The natural sweetness from the scallions is perfectly balanced, and after a bowl, you’ll feel invigorated and refreshed.
Step 8
The beauty of Daepa Guk is that you can create such a wonderful soup with simple ingredients. You’ll find its flavor rivals that of more elaborate broths. Please try making this delicious scallion soup! Enjoy your meal and stay healthy. Thank you today! ^^
