Main Ingredients
  • 2 stalks of scallions or green onions (use mostly the white parts)

Scallion Salad Dressing
  • 1 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1 Tbsp gochugaru (Korean chili flakes – adjust to spice preference)
  • 2 Tbsp vinegar (adjust for tanginess)
  • 1 tsp sesame oil
  • A pinch of toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

Prepare 2 stalks of scallions or green onions that have been washed thoroughly. You can use ‘jjokpa’ (small scallions) for a milder flavor and softer texture, or the white parts of larger green onions for a crispier bite. Choose according to your preference.

Step 2

Using a scallion cutter makes it quick and easy to slice the scallions. If you don’t have one, use a knife to thinly slice the scallions about 0.3 cm thick. Tip: If using larger green onions, first cut them lengthwise in half. Then, make a cut halfway through lengthwise on only one side (not all the way through). Gently open up the uncut side, and then roll it up to slice into thin strands for easier julienning.

Step 4

Place the sliced scallions in a bowl. Add 1 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp gochugaru, and 2 Tbsp vinegar. Now, gently mix and toss the ingredients with your hands (‘jomul jomul’) to evenly coat the scallions with the dressing. Be careful not to mash the scallions; toss them gently.

Step 5

Once the scallions are well combined with the dressing, drizzle in 1 tsp of sesame oil and sprinkle with a pinch of toasted sesame seeds. Give it one final gentle mix, and your delicious scallion salad is ready! Serve immediately with your favorite grilled meats for a perfect pairing.
