This recipe will guide you through making the popular salmon noodles and salmon soy sauce marinade, often seen on social media. As you slurp the tender salmon noodles, the flavorful soy sauce base enters your mouth, creating a delightful blend of savory and refreshing tastes – a truly unique delicacy. Main Ingredients
- 200g Fresh Salmon Fillet
- 1/4 Fresh Onion
- A small handful of fresh sprouts
- 3 slices of fresh Lemon
Salmon Noodle Broth
- 100ml Tentsuyu (Japanese dipping sauce)
- 300ml Cold Water
- 1 Tbsp Fresh Lemon Juice
- Ice cubes, as needed

Cooking Instructions
Step 1
Rinse the fresh salmon gently under cold running water to remove any impurities from the surface.
Step 2
For approximately 1kg of salmon, sprinkle 2 tablespoons (about 20g) of coarse salt evenly over the surface. The salt helps draw out moisture and eliminate any fishy odor.
Step 3
In a large bowl, combine 900ml of cold water with a generous amount of ice cubes to make it very chilly. Submerge the prepared salmon in this icy water for about 30 minutes to effectively remove any unpleasant odors.
Step 4
After 30 minutes, remove the salmon from the cold water and rinse it lightly under running water again to wash off the salt. Then, use paper towels to gently press down on the salmon’s surface, carefully patting it dry. Thoroughly drying the salmon is key to keeping it fresh.
Step 5
To store the salmon in the refrigerator, wrap it tightly with parchment paper or plastic wrap. This minimizes air exposure and helps maintain freshness. Place the wrapped salmon in an airtight container before refrigerating.
Step 6
Thinly slice the onion into julienne strips. If the onion is too pungent, soak it in cold water for over 10 minutes to mellow its sharpness. Afterward, drain it well in a sieve, ensuring all excess water is removed before use.
Step 7
Prepare 3 thin slices of fresh lemon. These will add a vital touch of bright, citrusy flavor and aroma to your salmon noodles.
Step 8
Slice the salmon into long, thin strips, similar to noodles, by cutting against the grain (opposite the direction of the white muscle fibers). This slicing technique ensures a tender texture and allows the sauce to absorb beautifully.
Step 9
Let’s create the delicious broth base for your salmon noodles. Mix Tentsuyu and cold water in a 1:3 ratio (e.g., 100ml Tentsuyu to 300ml water). If you plan to add a lot of ice, slightly reduce the amount of water to maintain a good concentration, as melting ice will dilute the flavor.
Step 10
In a serving bowl, pour the prepared Tentsuyu broth and add a generous amount of cold ice cubes. Arrange the prepared salmon slices on top. Squeeze in 1 tablespoon of fresh lemon juice for a bright kick. (Using freshly squeezed lemon juice will enhance the vibrant flavor!).
Step 11
Gently swirl and arrange the salmon noodle strips in the center of the bowl. Top generously with the julienned onion and crisp sprouts. Finally, artfully place the lemon slices for a refreshing garnish.

Pour an appropriate amount of the Tentsuyu soy sauce mixture over the salmon noodles. If desired, you can add more fresh lemon juice by squeezing the remaining lemon slices for an extra burst of freshness.
