Refreshing Radish Soybean Paste Soup with Homemade Miso

Simple and Easy Radish Miso Soup

This is my husband’s favorite soup! He says it’s so refreshing that he could eat it every day without getting tired of it. It’s a very simple and easy soup seasoned solely with homemade soybean paste (miso). It’s perfect for a comforting meal.

Main Ingredients
  • 400g daikon radish (about 1/4 of a medium radish)
  • 1.2 liters water (about 6 cups)
  • 1 dried kelp pack (or dried anchovy and kelp pack)
  • 1/3 stalk of green onion

Seasoning
  • 2 Tbsp homemade soybean paste (adjust to taste)
  • 1/2 Tbsp minced garlic

Cooking Instructions

Step 1

In a pot, combine the 1.2 liters of water and the dried kelp pack (or dried anchovy and kelp pack). Bring to a boil over medium heat. Once the water boils, remove the kelp pack. If using an anchovy and kelp pack, let it steep for about 5 more minutes before removing. This step helps create a deeper, more flavorful broth.

Step 2

Wash the daikon radish, peel it, and slice it into thin, rectangular pieces (about 0.5cm thick). Slicing it this way allows the radish’s refreshing flavor to infuse into the soup, and makes it easier to eat.

Step 3

Finely chop the green onion. Chopping them not too thinly will help retain a pleasant texture after cooking.

Step 4

Add the sliced daikon radish to the simmering broth. Dissolve 2 tablespoons of homemade soybean paste into the broth. It’s best to strain the miso through a sieve to ensure it dissolves smoothly and prevents lumps, resulting in a clearer, smoother soup.

Step 5

Once the soup comes to a rolling boil again, reduce the heat to medium-low. Add the chopped green onion and 1/2 tablespoon of minced garlic. Continue to simmer for about 5-7 minutes, or until the radish slices are tender and translucent. Cooking the radish thoroughly will bring out its natural sweetness and make it easier to digest.

Step 6

Ladle the delicious radish miso soup into bowls. Serve hot and enjoy this comforting and satisfying meal, perhaps with a bowl of steamed rice!
