Main Ingredients
  • 1 cup dried pollock threads (Hwangtae)
  • 1 section (about 5cm) radish
  • 1/4 block firm tofu

Cooking Instructions

Step 1

First, cut the dried pollock threads into bite-sized pieces using scissors. Slice the radish thinly into half-moon or rectangular shapes. Place the prepared pollock and radish into a pot, then drizzle in the sesame oil. Stir-fry over medium-low heat until the pollock and radish are evenly coated and lightly sautéed. This step helps to release their savory flavors and create a richer broth.

Step 2

Once the ingredients have been sautéed, pour in enough water or anchovy broth to cover them generously. Bring the pot to a boil over high heat and continue to simmer until the broth turns milky white. The radish becoming translucent is a good indicator that the broth has been sufficiently extracted.

Step 3

When the broth is milky white and the radish is tender, add the minced garlic and chopped green onion. Bring the soup back to a gentle boil, then add the diced tofu. Allow it to simmer for another moment. Season the soup with fish sauce (or soup soy sauce/salted shrimp) to taste. Gently stir to combine without breaking the tofu.

Step 4

Once all the ingredients are cooked through and the flavors have melded, your refreshing Pollock Roe and Radish Soup is ready! It offers a delicate, clean, and invigorating taste. With simple ingredients and a straightforward process, anyone can easily make this delicious soup to enjoy a satisfying and comforting meal.
