Refreshing Pickled Onions
Make Salmon Sashimi Sauce: Horseradish Sauce and Pickled Onions
Horseradish sauce is truly delicious with raw salmon sashimi. It tastes even better when paired with pickled onions.
Ingredients- Raw salmon sashimi 150g
- Capers, as needed
- Onion 130g
Horseradish Sauce- Mayonnaise 2 Tbsp
- Plum extract (or corn syrup) 2 Tbsp
- Wasabi 2 tsp (adjust to taste)
- Black pepper, a pinch
- Dried parsley flakes 1 tsp
Pickled Onions- Vinegar (apple cider or brown rice vinegar recommended) 1 Tbsp
- Salt 1 tsp
- Sugar 0.5 Tbsp
- Mayonnaise 2 Tbsp
- Plum extract (or corn syrup) 2 Tbsp
- Wasabi 2 tsp (adjust to taste)
- Black pepper, a pinch
- Dried parsley flakes 1 tsp

- Sugar 0.5 Tbsp
Cooking Instructions
Step 1
Here’s the star of our dish: fresh raw salmon sashimi. Make sure it’s sushi-grade.
Step 2
Peel and thoroughly wash the onion. Slice it into very thin julienne strips. Slicing thinly will result in a softer texture and allow the seasoning to penetrate better.
Step 3
In a bowl, combine the thinly sliced onion with 0.5 Tbsp sugar, 1 tsp salt, and 1 Tbsp vinegar. Mix well and let it sit for 10 minutes. This process will remove the onion’s sharp bite and infuse it with a sweet and sour flavor.

After 10 minutes, squeeze the pickled onions firmly by hand to remove excess water. Removing plenty of moisture is key to maintaining the crispness of the pickled onions.

To make the horseradish sauce, combine 2 Tbsp mayonnaise, 2 Tbsp plum extract, and 2 tsp wasabi in a bowl. Adjust the amount of wasabi according to your preference to control the level of spiciness.

Add a pinch of black pepper and 1 tsp of dried parsley flakes. Stir everything together until smooth. This completes your creamy and delicious horseradish sauce. The zesty kick of wasabi, the richness of the mayonnaise, and the subtle sweetness of the plum extract create a fantastic harmony.
