This is passion fruit puree! I considered buying fresh passion fruits, but then I remembered how much work it is to cut them all open and scoop out the pulp. That’s when I spotted this passion fruit puree! Lucky for me, it was on a buy-one-get-one-free sale, so I snapped it right up!

This is what passion fruit puree looks like. Some people say it resembles frogspawn! Haha. These are the passion fruit seeds, and they offer a fun, crunchy texture when you chew them. They add an interesting element to the drink.

Making passion fruit syrup at home is really simple. You know the classic 1:1 ratio of fruit to sugar? Well, passion fruit syrup follows the same rule! Use white sugar for the best color. I’m using ‘Sweetree Xylitol Sugar’ because its fine crystals dissolve easily. First, sterilize a clean jar by boiling it. Then, simply add the passion fruit puree and white sugar in a 1:1 ratio. That’s it!

You’ll notice the sugar settles at the bottom. Don’t worry about it! You don’t need to wait for it to dissolve completely before moving on. You can proceed to the next step right away.

Stir everything together thoroughly with a spatula or spoon. The sugar will dissolve quickly as it mixes with the passion fruit puree. And just like that, your delicious passion fruit syrup is ready! Now, let’s enjoy it!
