Ingredients
  • Oysters 100g
  • Seaweed 150g
  • Lemon zest from 1/4 lemon

Seasoning
  • Gochujang-based spicy sauce (Cho-gochujang) 3 Tbsp

Cooking Instructions

Step 1

First, prepare the fresh seaweed. Fill a large bowl with cold water, immerse the seaweed, and gently swish it around multiple times to thoroughly clean and remove any debris or excess salt.

Step 2

Next, we’ll briefly blanch the seaweed. Bring a pot of water to a rolling boil. Once boiling, add the thicker stems of the seaweed first and blanch for about 10 seconds. Then, add the rest of the seaweed and blanch for just 5 more seconds. The seaweed should turn a vibrant green. Immediately remove it from the boiling water and plunge it into cold water to stop the cooking process and maintain its crisp texture.

Step 3

Drain the blanched seaweed well. You can gently press it to remove excess water.

Step 4

Now, prepare the lemon zest. Wash the lemon thoroughly, perhaps using baking soda or coarse salt to scrub the peel. Using a fine zester or a sharp knife, carefully peel only the yellow outer layer of the lemon zest, avoiding the bitter white pith as much as possible. Finely julienne the zest for a delicate texture and maximum flavor release.

Step 5

Combine the prepared oysters and the drained seaweed in a bowl. Add the spicy sauce and gently mix everything together until well coated. Arrange the mixture attractively on a serving plate. Finally, sprinkle the finely julienned lemon zest generously over the top.
