Refreshing Oyster and Bean Sprout Soup Recipe
A Refreshing Winter Soup with Oysters and Bean Sprouts

Winter is the perfect time for seafood, and oysters truly shine in this soup! Today, we’re making a wonderfully refreshing and clear broth using fresh oysters and crisp bean sprouts. The clean, briny flavor from the oysters makes this soup an ideal hangover remedy or a comforting bowl for any cold day. It’s so good, you’ll want to pair it with a steaming bowl of rice!
Ingredients- 200g Bean sprouts
- 200g Fresh oysters
- 5 cups Anchovy-kelp broth (or water)
- 1 tsp Salted shrimp (saeujeot)
- 1 tsp Minced garlic
- 1 tsp Fish sauce (optional, for extra umami)
- 2 Korean chili peppers (cheongyang)
- Pinch of salt (to taste)
Cooking Instructions
Step 1
First, thoroughly rinse the bean sprouts under cold running water and drain well. For the oysters, gently wash them in lightly salted water to remove any grit or shell fragments, then drain them on a sieve. If you have anchovy-kelp broth prepared, it will add more depth of flavor, but you can certainly use plain water if you prefer.

Step 2
In a pot, combine the rinsed bean sprouts and 5 cups of anchovy-kelp broth (or water). Bring to a boil over high heat. At this stage, add 1 teaspoon of salted shrimp for a clean, briny taste and 1 teaspoon of fish sauce for added umami.

Step 3
For an extra kick of heat, you can add one dried Korean chili pepper, broken into pieces, to the pot. Once the soup comes to a rolling boil, reduce the heat to medium and simmer for about 5 more minutes to allow the refreshing flavor of the bean sprouts to infuse into the broth.

Step 4
As the soup begins to boil vigorously again, carefully add the fresh oysters. Cook them gently for just 2-3 minutes; overcooking can make oysters tough. Stir in 1 teaspoon of minced garlic and some chopped scallions (or green onions). Taste the broth and adjust the seasoning with salt if needed.

Step 5
Let the soup simmer for another brief moment after adding the garlic and scallions, allowing all the flavors to meld together beautifully. Serve immediately while hot for a deeply satisfying and invigorating Oyster and Bean Sprout Soup!
