I often discover fresh purslane growing near the fields and love to make it into a salad. This time, I decided to add some frozen mandu, air-fried until crispy, to my salad for a delightful twist. The combination of the savory, crispy mandu and the fresh, slightly tangy purslane creates a perfectly balanced and delicious dish.

Salad Ingredients

  • 20-25 frozen dumplings (mandu)
  • 1 bunch fresh purslane
  • A small handful of fresh mint leaves

  • 2 Tbsp pineapple vinegar
  • 2 Tbsp Acanthopanax fruit fermented extract
  • A pinch of salt

Cooking Instructions

First, carefully clean the purslane. Gently trim off any tough stems or roots. Once cleaned, soak the purslane and mint leaves in water with a splash of vinegar for about 5 minutes. This helps to loosen any dirt or tiny insects. After soaking, rinse them thoroughly 2-3 times under cool running water and then gently pat them dry or let them drain well in a colander. Removing excess water is key for a vibrant salad.

Next, let’s prepare the refreshing dressing. In a small bowl, whisk together 2 tablespoons of pineapple vinegar and 2 tablespoons of Acanthopanax fruit fermented extract. Add a tiny pinch of salt and stir until dissolved.
