  • 1 pack of store-bought cold noodle soup broth
  • 1/2 cup kimchi brine
  • 1 egg

Kimchi Topping

  • 1 handful of aged kimchi, finely chopped
  • 1 Tbsp sesame oil
  • 1.5 Tbsp toasted sesame seeds

Side Dish (Optional)

  • Grilled pork or your preferred meat

Cooking Instructions

First, open one pack of cold noodle soup broth. This recipe is for one serving, so if you’re making it for multiple people, adjust the amount of broth based on the bowl size and desired portion. Preparing extra broth ensures a more generous and satisfying meal.

Pour 1/2 cup of kimchi brine into the prepared cold noodle soup broth and mix well. You can adjust the amount of kimchi brine to your preference; add a bit more if you enjoy a tangier flavor. It’s important to season the broth so it has a rich kimchi aroma. Once everything is well combined, place this broth in the freezer until it starts to form a layer of ice. This will make the noodles extra refreshing.

While the broth is chilling, let’s make the delicious kimchi topping. In a bowl, combine the finely chopped aged kimchi with 1 tablespoon of sesame oil and 1.5 tablespoons of toasted sesame seeds. Gently mix them together. The crunchy texture of the kimchi combined with the nutty sesame seeds and fragrant sesame oil will enhance the overall flavor of the noodles.

Now it’s time to cook the noodles. Add your somyeon or noodles to a pot of generously boiling water and cook them. Here’s a tip to check if the noodles are cooked: have a cup of cold water ready. Take out a few strands of noodles, rinse them in the cold water, and taste. If they are tender, drain them immediately. If they are still too firm, cook them a little longer. Once cooked, rinse the noodles thoroughly in cold water to remove excess starch, then drain them well in a sieve. Achieving firm, chewy noodles is key!
