Refreshing Herb Dressing Salad Pasta
Perfect for Entertaining! Easy Cold Pasta Salad Recipe with Fragrant Herb Sauce
Hello everyone! Today, I’ll be sharing a recipe for a fresh and light ‘Salad Pasta’. While you can use regular pasta, today we’re specially using konjac noodles, which are low in calories and have a delightful texture. It looks beautiful and tastes wonderful, making it perfect for serving guests at parties or special occasions.
Main Ingredients- Pasta or Konjac Noodles (1 serving)
- Mozzarella Cheese (to taste)
- Mini Bell Peppers (2-3, assorted colors)
- Fresh Salad Greens (Romaine, lettuce mix, etc.)
- Minced Garlic (1/3 Tbsp)
- Vinegar (1 Tbsp)
- Fermented Rice Herb Salt (1 Tbsp) or regular salt
- Sugar (1/2 Tbsp)
- Olive Oil (2 Tbsp)
Cooking Instructions
Step 1
First, prepare 1 serving of pasta or konjac noodles. Bring a pot of water to a boil. Cook the pasta according to package directions, or blanch the konjac noodles briefly. After cooking, rinse thoroughly under cold water and drain completely. This step is crucial to prevent the noodles from becoming mushy and to maintain their firm, chewy texture.
Step 2
Add mozzarella cheese generously, according to your preference. Wash the tri-color mini bell peppers, remove the seeds, and thinly slice them into strips. The vibrant colors will make your salad look even more appetizing.
Step 3
Add fresh leafy greens for a delightful crunch. You can use Romaine lettuce or iceberg lettuce, or mix in any available salad greens. Wash the greens thoroughly, pat them dry, and chop them into bite-sized pieces.
Step 4
Now, let’s make the refreshing herb dressing that brings this salad pasta to life! In a bowl, combine 2 Tbsp olive oil, 1/3 Tbsp minced garlic, 1 Tbsp vinegar, 1 Tbsp fermented rice herb salt, and 1/2 Tbsp sugar. Whisk everything together until well combined. This dressing is simple yet flavorful, and it’s versatile enough to be used with various other salads.
Step 5
Using fermented rice herb salt will add a deeper, more exotic flavor. If you don’t have it, you can season with regular salt. If regular salt is used, you might want to add a pinch of dried herbs or black pepper for extra aroma. Adjust the amount of sugar or vinegar to your taste to achieve the perfect balance of flavors.
Step 6
Combine the prepared noodles, greens, bell peppers, and mozzarella cheese in a large bowl. Drizzle the herb dressing evenly over the ingredients. Gently toss everything together until well coated. Be careful not to overmix, as this can bruise the delicate greens.
Step 7
Making salad pasta is incredibly simple, isn’t it? Especially if you’re on a diet or looking for a light and healthy meal, try making this cold pasta salad with konjac noodles like I did. It’s satisfying and refreshing, making for a wonderful meal!
