Introducing Tzatziki sauce, perfect for those days when the weather gets too hot, and your appetite wanes, calling for simple, no-cook meals! This sauce is nicknamed ‘Greek Ssamjang’ (Korean seasoned paste) because it pairs wonderfully with virtually any dish! The crisp cucumbers and creamy Greek yogurt make it incredibly delicious! As someone who lived in Europe for a long time, I absolutely adore this dish! I’ve added whole grain mustard to the basic Tzatziki sauce for an extra umami kick, but you can omit it if you prefer. It’s fantastic spread on bread or enjoyed as a refreshing salad!

Ingredients

  • 200g Greek Yogurt (about 2-3 generous tablespoons)
  • 1 Cucumber
  • 10g fresh Dill
  • 1/2 Tbsp minced Garlic
  • 1 Tbsp Olive Oil
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Whole Grain Mustard (optional, adjustable to taste)
  • 1/2 Tbsp Salt (for salting cucumbers)
  • Fresh Dill (for garnish, optional)
  • Additional Lemon Juice (for taste adjustment, optional)

1. Prepare all your ingredients. Finely chop the fresh dill.

2. Thinly julienne the cucumber. You can use a mandoline for uniform slices or a knife to cut it as thinly as possible.

3. Place the julienned cucumber in a bowl, sprinkle with 1/2 Tbsp of salt, and toss gently. Let it sit for about 5 minutes to draw out moisture. Afterward, squeeze the cucumber firmly with your hands to remove as much water as possible. This step is crucial for a crispier and less watery salad.

4. In a separate bowl, combine the Greek yogurt (2-3 large tablespoons), whole grain mustard (1 Tbsp), olive oil (1 Tbsp), and lemon juice (1 Tbsp). Mix well to create the sauce base.

5. Add the squeezed cucumber and chopped dill to the sauce mixture. Toss everything together until well combined. Taste and adjust seasoning with a little more lemon juice or salt if needed.
