  • 1 cucumber
  • 1 bowl of cooked rice
  • 1 can (150g) tuna

First, wash the cucumber thoroughly. Using a vegetable peeler, carefully peel long, thin ribbons from the cucumber. Aim for slices about 1-2mm thick, similar to thin noodles.

Place the sliced cucumber in a bowl. Add 2 tablespoons of persimmon vinegar, 1 tablespoon of sugar, and a pinch of salt. Gently mix well. Let it marinate for about 15 minutes. After marinating, squeeze out the excess water from the cucumber using your hands. This step helps the cucumber stay crisp and not become mushy.

Drain the oil completely from the canned tuna. You can place the tuna in a sieve and press it with a fork to remove as much oil as possible, as excess oil can make the filling too greasy.

Finely mince the 2 Korean green chili peppers. If you enjoy spicy food, you can leave the seeds in. In a bowl, combine the drained tuna, minced chili peppers, and 2 tablespoons of mayonnaise.

Mix all the ingredients for the filling together thoroughly using a fork or spoon until well combined. This will create a creamy and flavorful tuna-mayonnaise mixture.

In a bowl of warm cooked rice, add 1 tablespoon of sesame oil, 1 tablespoon of roasted sesame seeds, and a pinch of salt to taste. Gently mix with a spatula, being careful not to mash the rice grains.

Now, let’s assemble the cucumber wrapped rice rolls. Take a portion of the seasoned rice with your hand and form it into a round ball, about bite-sized.
