  • 1 cucumber
  • 1/4 onion
  • 90g imitation crab meat (kani kama)
  • 1 tomato

Dressing Ingredients

  • 1/4 finely chopped onion
  • 2 Tbsp olive oil
  • 1 Tbsp sesame oil
  • 4 Tbsp plum syrup (maesilcheong)
  • 1 Tbsp vinegar
  • 1 Tbsp balsamic vinegar
  • 1 tsp roasted salt
  • A pinch of black pepper

Cooking Instructions

First, wash the cucumber thoroughly. Cut it lengthwise into four pieces. Then, use a spoon to gently scoop out the watery seed core (this is called ‘dureolkkakgi’ in Korean) for a cleaner texture. Finally, slice the cucumber into bite-sized pieces.

Thinly slice the 1/4 onion and soak it in cold water for about 5 minutes to remove its strong flavor. This step keeps the onion crisp while making it milder and more pleasant in the salad. After soaking, drain the onion slices well, pressing out any excess water.

Finely mince the portion of onion that will go into the dressing. Minced onion adds a wonderful depth of flavor to the dressing.

Cut the ripe tomato into bite-sized pieces, similar in size to the cucumber slices. Removing the stem is key. Try not to cut them too large so they mix well with the other ingredients and are easy to eat.

Shred the imitation crab meat by hand into bite-sized strands. Shredding it along its natural grain will enhance its texture.

In a bowl, combine all the dressing ingredients: minced onion, olive oil, sesame oil, plum syrup, vinegar, balsamic vinegar, roasted salt, and pepper. Whisk them together with a whisk or spoon until well combined to create a delicious dressing. The plum syrup adds sweetness and tang, while the balsamic vinegar contributes a rich flavor.
