Explore a variety of dishes with cucumbers, the quintessential summer vegetable that tantalizes the appetite. This is a recipe I make often. It’s a simple yet incredibly tasty cucumber salad. With very little salt, you can enjoy a low-sodium meal. Prepare a simple yet delicious dish to brighten your day.
Main Ingredients- 1 fresh cucumber
- 40g crisp lettuce
- 1/4 red bell pepper, sweet
Cooking Instructions
Step 1
Wash the lettuce thoroughly and pat it dry. Tear it into bite-sized pieces. Its vibrant green color will surely whet your appetite.
Step 2
Rinse the fresh cucumber under running water. Trim off the ends and cut it lengthwise into quarters. You’ll love the fresh aroma of cucumber.
Step 3
Take the quartered cucumber pieces and slice them in half lengthwise. Then, using a spoon or a small knife, gently scoop out and discard the seeds from the center. Removing the seeds will reduce excess moisture and enhance the crispness of the salad.
Step 4
Dice the seedless cucumber into approximately 1cm cubes. Cutting them into manageable pieces will ensure they blend well with the other salad ingredients.
Step 5
Remove the seeds from the red bell pepper and dice it into cubes similar in size to the cucumber. The vibrant red pepper will add a beautiful splash of color to your salad.
Step 6
In a small bowl, combine the lemon juice, sugar, salt, whole grain mustard, and olive oil. Whisk with a fork or small whisk until well combined to create a delightful dressing. Ensure all ingredients are thoroughly blended. Once your cucumber, lettuce, and bell pepper are in a serving bowl, drizzle this dressing over them and toss gently. Your delicious cucumber salad is ready to be enjoyed!
