Main Ingredients

  • 1/2 cucumber
  • 1/2 onion
  • 1 Korean chili pepper (cheongyang gochu)
  • 200g chicken breast
  • 0.2 Tbsp salt (for seasoning chicken breast)
  • 0.1 Tbsp black pepper (for seasoning chicken breast)
  • 1 Tbsp lemon juice

Spicy & Sweet Dressing

  • 3 Tbsp soy sauce
  • 2 Tbsp cooking wine (mirin, etc.)
  • 1 Tbsp gochujang (Korean chili paste)
  • 0.5 Tbsp minced garlic
  • 2 Tbsp oligosaccharide (or corn syrup/sugar)
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, wash the cucumber thoroughly under running water and cut it in half lengthwise. If it has too many seeds, gently scrape them out with a spoon. Slice the cucumber into bite-sized pieces, about 0.5cm thick, at an angle. Thinly slice the onion into strips, and finely mince the Korean chili pepper. If you prefer less heat, you can remove the seeds from the chili pepper.

Now, it’s time to make the spicy and sweet dressing that will be the star of your chicken breast and cucumber salad. In a bowl, combine 3 Tbsp soy sauce, 2 Tbsp cooking wine, 1 Tbsp gochujang, 0.5 Tbsp minced garlic, and 2 Tbsp oligosaccharide. Mix well. You can use sugar instead of oligosaccharide if preferred. Finally, add 1 Tbsp sesame oil and 1 Tbsp toasted sesame seeds for a glossy finish.

Rinse the chicken breast well. About 200g is a suitable amount for 1-2 servings. In boiling water, add 0.2 Tbsp salt and 0.1 Tbsp black pepper, then add the chicken breast and boil for 15-20 minutes. Once cooked, let the chicken breast cool slightly, then shred it lengthwise with your hands. This allows the seasoning to penetrate better, making it even more delicious. Adding bay leaves or whole peppercorns while boiling the chicken breast can help remove any gamey smell.

Place the shredded chicken breast into a large bowl. Pour the delicious dressing you made earlier generously over the chicken breast.

Add the sliced cucumber, thinly sliced onion, and minced Korean chili pepper to the bowl as well. The addition of colorful vegetables makes the dish look much more appetizing.

Now, gently mix everything together to ensure the dressing coats all the ingredients evenly. Be careful not to mix too vigorously, as this can make the cucumber mushy. Gently toss until all the ingredients are well combined with the dressing.

Finally, drizzle 1 Tbsp of lemon juice to add a touch of freshness. The lemon juice cuts through any richness and adds a refreshing aroma, elevating the flavor of the chicken breast and cucumber salad. Give it a final light toss, and your wonderful chicken breast and cucumber salad is ready!
