Main Ingredients- 1 Cucumber
- 5 Crab sticks (small size)
- 1/2 Persimmon
- A pinch of black sesame seeds (for garnish)
Wasabi Mayo Sauce- 4 Tbsp Mayonnaise
- 1/4 tsp Grated wasabi (adjust to taste)
- 1.5 Tbsp Honey
- Pinch of salt
- Pinch of pepper
Cucumber Seasoning- 2 Tbsp Water
- 2 Tbsp Vinegar
- 2 Pinches of salt
- 1 Tbsp Brown sugar
- 4 Tbsp Mayonnaise
- 1/4 tsp Grated wasabi (adjust to taste)
- 1.5 Tbsp Honey
- Pinch of salt
- Pinch of pepper

- 2 Tbsp Vinegar
- 2 Pinches of salt

Step 1
Prepare all your ingredients before you begin. Fresh ingredients are the foundation for delicious food!

Peel the persimmon. Use a small cookie cutter to shape half of the persimmon into cute mini persimmon flowers. Dice the remaining persimmon finely. Gently shred the crab sticks with your hands.

Wash the cucumber thoroughly and slice it in half lengthwise. Use a teaspoon to carefully scoop out the seedy core, creating a hollow boat shape. Finally, cut them into about 2.5cm pieces to form bite-sized cucumber boats.
Step 4
Place the prepared cucumber boats in a bowl. Add 2 Tbsp water, 2 Tbsp vinegar, 2 pinches of salt, and 1 Tbsp brown sugar. Gently toss to coat, then let it sit for 5 to 10 minutes to lightly season the cucumber.

In a separate bowl, combine the shredded crab sticks and diced persimmon. Add 4 Tbsp mayonnaise, 1/4 tsp grated wasabi (for a subtle kick), 1.5 Tbsp honey, a pinch of salt, and a pinch of pepper to create the dressing.

Gently mix everything together with a spatula or spoon until well combined. This creates a delicious crab salad where the tender crab, sweet persimmon, and zesty wasabi mayo blend harmoniously.

Drain the seasoned cucumber boats and pat them dry with paper towels or a clean cloth. Generously fill the hollowed-out center of each cucumber boat with the crab salad mixture. Your delicious cucumber boats are now ready!
