Feeling the holiday stress and craving a drink with some delicious soup? Clam soup made with ‘Baek Golbaengi’ (a type of sea snail) is incredibly refreshing and flavorful. While shopping, I found ‘Ppiduri Sola’ (another sea snail) instead of Baek Golbaengi. It’s important to note that Ppiduri Sola requires careful preparation: you must remove the salivary glands and innards before eating the meat to ensure it’s safe. Baek Golbaengi is excellent for soup, while Ppiduri Sola is best enjoyed after boiling and cleaning the meat. Today, I’ll guide you through making a wonderfully refreshing Baek Golbaengi soup!
Main Ingredients- 1kg Baek Golbaengi (Sea Snails)
- 1/3 stalk Green Onion
- 1 Red Chili Pepper

Step 1
Thoroughly wash the fresh Baek Golbaengi under running water. To remove any dirt or debris, gently scrub the shells with a brush. This step is crucial for a clean and clear broth.

Place the washed Baek Golbaengi in a pot and add enough water to fully submerge them. Add 2 pieces of dried kelp to enhance the umami flavor. Bring the water to a rolling boil over high heat.

Once the water starts boiling, add all the prepared Baek Golbaengi to the pot. To eliminate any fishy odors and add a touch of sweetness, stir in 3 tablespoons of mirin. Begin boiling on high heat, then reduce to medium heat and simmer for a total of 15 minutes. This process will tenderize the sea snails and deepen the soup’s flavor.

For an even more satisfying meal, you can add fish cakes to your clam soup. If you choose to add fish cakes, put them in the pot once the soup begins to boil after adding the clams. The fish cakes will absorb the delicious broth, adding another layer of flavor.
