Refreshing Clam Noodle Soup (Bajirak Kalguksu)

This is a clam kalguksu where the rich broth from fresh clams infuses every bite. The addition of potatoes makes it delightfully tender and the soup exceptionally refreshing. Enjoy this hearty and flavorful Korean noodle soup.
Ingredients- Kalguksu noodles, 3 servings (approx. 300g)
- 2 bags fresh, pre-cleaned clams (approx. 400-500g)
- 2 medium potatoes
- 1/2 large leek
- 8 cups water (approx. 1.6L)
Cooking Instructions
Step 1
Rinse the clams thoroughly under running water to remove any sand or impurities. Drain them well in a colander; this helps ensure a cleaner broth.
Step 2
Peel the potatoes and slice them into half-moon shapes about 0.5cm thick. Slice the leek diagonally, separating the white and green parts.
Step 3
In a deep pot, combine the cleaned clams and 8 cups of water. Bring to a boil over high heat. Once boiling, reduce the heat to medium and cover. Simmer for about 10 minutes to extract the delicious clam broth.
Step 4
Carefully place the kalguksu noodles in a colander and rinse them briefly under cold running water to prevent sticking. Drain the noodles thoroughly to avoid clouding the broth.
Step 5
Add the sliced potatoes to the clam broth and bring back to a simmer. Once the potatoes are halfway cooked, add the kalguksu noodles. Continue to cook over medium heat until the potatoes are tender and the noodles are cooked through and soft. Gently stir occasionally to prevent the noodles from clumping.
Step 6
Once the potatoes and noodles are cooked, add the sliced leeks and simmer for another minute until fragrant. The soup is now complete! (Optional: Season with minced garlic, soy sauce, and salt to your preference.)
