Refreshing Chive Cold Salad: A Quick and Delicious Recipe

Boost your appetite with this vibrant and refreshing cold salad made from nutritious chives! Chives are packed with vitamins A and C, supporting your immune system, and they also aid in detoxifying free radicals and improving blood circulation. The allicin compound in chives enhances the absorption of vitamin B1 found in pork, making it effective for fatigue recovery and stamina enhancement. This chive salad is incredibly simple to make and offers a wonderful side dish or light meal, especially when you need a flavor pick-me-up. The tangy and slightly sweet mustard dressing perfectly complements the fresh ingredients.

**Tips for Selecting Fresh Chives:**
1. Look for chives with a vibrant green color and a fresh appearance.
2. Ensure the leaves are straight and free from wilting or breakage.
3. Chives with thicker, wider leaves tend to have a stronger flavor.
4. A pungent aroma indicates freshness and quality.

  • Servings : 2 servings
  • Difficulty : Anyone

Main Ingredients

  • 100g fresh chives
  • 50g blanched bean sprouts
  • 1/4 cucumber
  • 10g carrot
  • 30g imitation crab sticks

Tangy Mustard Dressing

  • 1/2 Tbsp minced garlic
  • 1 Tbsp mustard paste
  • 3 Tbsp vinegar
  • 1/2 Tbsp lemon juice
  • 1 pinch salt
  • 2 Tbsp sugar

Cooking Instructions

Step 1

Rinse the fresh chives thoroughly under running water. Trim the roots and cut the chives into approximately 4-5cm lengths for easy eating.

Step 1

Step 2

Blanch the bean sprouts in boiling water for about 1 minute. Be careful not to overcook them, as they can become mushy.

Step 2

Step 3

Immediately drain the blanched bean sprouts and rinse them under cold running water to stop the cooking process. Squeeze out any excess water to maintain their crispiness.

Step 3

Step 4

Peel the cucumber using a vegetable peeler. Then, julienne it into thin strips. You can remove the seedy core if it seems too watery.

Step 4

Step 5

Julienne the carrot into thin strips, similar in size to the cucumber. Carrots add a lovely color and sweetness to the salad.

Step 5

Step 6

Gently shred the imitation crab sticks lengthwise with your fingers. This creates a more pleasant texture compared to cutting them.

Step 6

Step 7

Prepare the dressing. In a small bowl, combine the minced garlic, mustard paste, vinegar, lemon juice, salt, and sugar. Whisk until the sugar is dissolved and the dressing is well combined.

Step 7

Step 8

In a large mixing bowl, combine the prepared bean sprouts, julienned cucumber, carrot, and shredded imitation crab sticks. Set the chives aside for now.

Step 8

Step 9

Pour the prepared mustard dressing over the ingredients in the bowl. Gently toss everything together to ensure an even coating of the dressing.

Step 9

Step 10

Finally, add the cut chives to the bowl. Gently toss one more time to incorporate the chives without bruising them. Your refreshing chive cold salad is ready to be served and enjoyed!
