  • 1/2 crisp onion

Sweet & Spicy Dressing

  • 2 Tbsp gochugaru (Korean chili powder)
  • 1 Tbsp soy sauce
  • 1 Tbsp maesilcheong (Korean plum extract)
  • 1 Tbsp vinegar
  • 1 tsp sugar
  • 1 tsp tuna extract (optional, for umami)
  • 1 Tbsp sesame oil
  • 1/2 Tbsp toasted sesame seeds

First, peel and wash the half onion. Slice it thinly into julienne strips. While finely slicing is good, aim for a medium thickness so the dressing adheres well and the texture remains pleasing.

Place the julienned onion in a bowl of cold water for about 5 to 10 minutes to mellow its pungent flavor. Afterward, drain the onion thoroughly in a colander. Pat the onion dry with paper towels to remove any excess moisture; this is crucial for maintaining the salad’s crispness and preventing it from becoming watery.

Trim the root ends of the fresh chives, wash them well, and drain. Cut the chives into manageable pieces, about 4-5 cm (approximately 1.5-2 inches) in length. This size ensures they are easy to eat and mix well with the dressing.

In a separate bowl, combine all the dressing ingredients: 2 tablespoons of gochugaru, 1 tablespoon of soy sauce, 1 tablespoon of maesilcheong, 1 tablespoon of vinegar, 1 teaspoon of sugar, 1 teaspoon of tuna extract (if using), and 1 tablespoon of sesame oil. Whisk everything together until the sugar is dissolved and the dressing is well combined.

Add the prepared julienned onion and the cut chives to the bowl with the dressing. Gently toss everything together with your hands, ensuring that the chives and onions are evenly coated with the dressing. Be careful not to overmix, as this can bruise the chives and make them mushy.
