This recipe features a tangy and sweet broth enriched with creamy peanut butter, generously topped with a variety of seafood, fresh vegetables, and delicate egg crepes. Main Ingredients- Chinese cold noodles (fresh) 150g
- Egg 1 pc
- Carrot, julienned 50g
- Cucumber, julienned 50g
- Cooked shrimp 30g
- Jellyfish (salted or instant) 15g
- Cooked sea cucumber, julienned 15g
- Cooked squid, julienned 15g
- Five-spice beef slices (or ham), julienned 15g
- Lettuce, shredded 15g
Broth Seasoning- Store-bought cold noodle broth or cold purified water 500ml
- Vinegar 2 Tbsp
- Sugar 1 Tbsp
- Soy sauce 1 Tbsp
- Chicken stock 1 tsp (or flavorful broth)
- Peanut butter (smooth) 1 Tbsp

Cooking Instructions
Step 1
First, prepare the peanut butter. Using a store-bought smooth peanut butter will make this step convenient.
Step 2
In a bowl, combine the cold noodle broth (or purified water) and the peanut butter. A good ratio to start with is approximately 2 parts broth to 1 part peanut butter (2 Tbsp broth to 1 Tbsp peanut butter).
Step 3
Whisk the broth and peanut butter together until smooth and creamy, creating a rich and flavorful peanut broth base. Ensure there are no lumps for a silky texture.
Step 4
Prepare the egg crepes by whisking the egg and pouring a thin layer into a lightly oiled pan. Cook over low heat until set.

Once the egg crepes have cooled, slice them into thin strips to be used as a garnish.

Boil the fresh Chinese cold noodles in plenty of water until fully cooked. Stir occasionally to prevent sticking. Once cooked, rinse thoroughly under cold running water to remove excess starch, drain well, and place them in your serving bowl.

Arrange the prepared toppings over the noodles: cooked shrimp, julienned squid, sea cucumber, carrots, cucumbers, and lettuce. Gently spoon the prepared peanut broth base over the ingredients.

In a separate bowl, combine the cold noodle broth (or purified water, 500ml) with vinegar (2 Tbsp), sugar (1 Tbsp), soy sauce (1 Tbsp), and chicken stock (1 tsp). Stir well. Chill this broth thoroughly in the refrigerator before serving. Pour the ice-cold broth over the noodles and toppings.

Finally, add the julienned five-spice beef slices (or ham) and the prepared egg crepe strips as a final garnish.
